It then opened at Forbestown in Taguig City, Valero Street in Makati City, S’Maison in Pasay City, Eastwood Mall in Quezon City and SM City Bacoor. With the talented chef Mikel Zaguirre and his team at the helm, Locavore takes the homey heartwarming flavors of Filipino cooking gives a more sophisticated interpretation. And with the newly opened branch comes an expanded menu and new dishes exclusively in the Estancia outlet. For starters, have the crisp BBM or Bagnet, Buro and Mustasa — a platter filled with thinly sliced, crispy pork bagnet chips that you wrap in mustasa leaves (Samgyup style) seasoned with burong (pickled) hipon and burong mangga with gochugaru (Korean chili flakes). Follow it up with Bistek Pintxos, toasted bread decked with bistek-style beef tenderloin, grilled quesong puti, truffle aioli and red onions. We were thinking of madaling kainin (easy to eat) and something fun. Because samgyup is trending, we came up with pintxos.” The resto also has Bulalo Pintxos, roasted bone marrow with pickled labanos and pares jam; Yakitori Platter, grilled skewered chicken wings, chicken thigh meat, gizzard and liver served with annatto aioli, tocino butter, miso butter and spiced suka; Bagnet Chips, housemade bagnet chips served with spiced vinegar; and Inasalitos, inasal chicken with salsa, labuyo aioli served in lumpia taco shell. All these dishes are paired with seven new signature cocktail drinks, crafted by its in-house mixologist. Pahan says the new refreshing drinks heavily relies on the food being served at the restaurant. They complement the taste of the meals. Locavore serves alcohol and spirits. The drinks include Hardin, a hybrid between gin tonic and Tom Collins, with tonic water and botanicals and floral notes like blue pea and elderflower (which has a similar taste notes of lychee), garnished with rosemary and black pepper; Kinilig, a combo of Disaronno amaretto, honey, lemon juice and rum, with rice paper art design on top; Diwata, a blend of Bombay Sapphire gin with Giffard Lychee liqueur, sugar syrup and lemon juice, dressed with basil sprig and forget me not flower; and Antibayotiko, a whiskey-based mix of bourbon, ginger liqueur, honey and lemon juice. Locavore at Estancia Mall has a seating capacity of 120 people and targets bar goers in the area. It’s open until 1 a.m. from Wednesday to Saturday. The rest of the week, it follows the mall hours. OLIVE GARDEN AT THE VERVE A visit to the newly opened third branch of Olive Garden at The Verve in BGC, Taguig City, is a journey of discovery into a world of delicious and affordable pasta, bread, salad, chicken and pizza sensibilities. The menu is broad and touches base with all the departments of classic Italian-American fare. Upon arrival, diners are swiftly delivered a basket of freshly baked breadsticks, which are widely popular in all 900 Olive Garden stores all over the world, including the Philippines. They are buttery, a bit garlicky, moist and chewy. The unlimited breadsticks, including the never-ending soups and salads, come free with every order of an entrée. What a treat! Olive Garden first opened at the Mall of Asia on 12 September 2022 and at Glorietta 3 in Makati City on 9 January 2023. “It is, more or less, the same menu that we have for our first branch in MOA and also the same menu all over the United States,” Rechele Tiongson, chief operating officer of The Bistro Group, the company responsible for bringing in Olive Garden which was founded in 1982 in Orlando, Florida. “We never changed anything aside from modifying some of the portions that would fit the Filipino market, but the taste and flavor are the same. We use the finest ingredients like imported cheeses.” She adds: “Just to be clear, we did not reduce the portions but we introduce the smaller ones like solo version for those will smaller appetites. The big portions remain the same.” Browsing the menu uncovers more inviting dishes, such as the signature item, Tour of Italy (a huge platter of everything good — Chicken Parmigiana, Lasagna Classico and Fettucino Alfredo pasta), Amazing Alfredos (made from scratch using imported cheeses, not just heavy cream) and an Italian classic, Shrimp Scampi. Just recently, four new dishes were introduced — Mediterranean Chicken, Chicken Tuscany, Roasted Herb Chicken and Italian Braised Short Ribs, all served with a choice of mashed potato or steamed rice. “We are happy with the response of the public to Olive Garden,” shares Tiongson. “It was extremely unexpected when we first opened in MOA. We were busy for the next six months of the restaurant. The queue was really long. People had to wait for 30 to 45 minutes, which we felt bad for our customers, but that was how they responded to the first opening of Olive Garden in the Philippines.” Olive Garden’s vibe is casual, light and bright yet it is warm and comforting with olive green accents. The design of the interiors is an allusion to the Italian countryside through earth tones and natural textures. It can accommodate 150 people. Taylen Biggs has close to 1.5 million followers across TikTok and Instagram, a wardrobe full of designer clothes and 15 fashion weeks under her belt -- and she's 10 years old. Taylen arrived at last week's Balmain show, one of the hottest tickets of Paris Fashion Week, in a luxurious white jacket-and-skirt combo by the French label, black boots and bag by Karl Lagerfeld and her favourite Vintage Frames shades. She was followed, as always, by her cameraman. Also keeping a discreet distance was her "bodyguard", as she calls him, who also happens to be her father. "I love fashion and I love meeting new people and interviewing them and seeing what they have to say," she told AFP, before getting down to business with her microphone. Taylen, who lives in Miami, has interviewed the likes of DJ Khaled, popstar Kali Uchis and American Football star Patrick Mahomes, as well as a huge number of models, designers and fellow fashionistas. She is practically a veteran of red carpets, appearing at everything from the MTV Music Awards to the Superbowl, a regular at New York and Miami fashion weeks, and all over Milan and Paris for the past fortnight. "I really miss my family a lot," she said. "And I miss Miami. But I don't miss the food from Miami. I'm in love with the food here." Mooncakes are a traditional Chinese delicacy that are enjoyed and given as a gift to friends, colleagues, family, relatives and clients during the Mid-Autumn Festival, which is now better known as the Mooncake Festival. The date changes every year because it follows the Lunar calendar. Highlight of the festival takes place on 29 September this year, but the celebration is actually longer than that. There are so many different kinds of mooncakes these days — from the traditional lotus paste to the more contemporary beans, nuts and custards, even meats. And the ultimate indulgence, the egg yolk, can be just one or as many as four or six. Shapes, too, shift from square to round, and sizes range from small, almost bite-sized, to big and for-sharing. After successful collaborations to produce cakes and alcoholic drinks in ice cream, Karabella Dairy recently joined hands with chef Nathaniel Uy of TheHungryChef to create two flavors of mooncake gelato. Chef Nathaniel is, after all, known for his homemade, artisanal mooncakes, which he produces and sells during mooncake season. He makes exquisite flavors, including black bean mooncake, ube mooncake and coffee mooncake. The fillings are also ‘sakto to panlasang Pinoy’ and very creative, too,” said Jan Buenaflor of Karabella Dairy. Karabella already had the gelato base flavor, the brand’s best-selling Salted Egg Caramel Gelato for the Salted Egg Caramel Ube Mooncake Gelato, one of the two flavors that came out of the collaboration. Then Ericjan “EJ” Buenaflor, the gelato master of Karabella, created a new matcha base for the other flavor, Matcha Red Bean Mooncake Gelato. The results: The salted egg in the first Mooncake Gelato flavor has its saltiness balanced by the sweetness of the caramel and the ube, so that the ingredients complement each other. The matcha in the second flavor provides a distinct and refreshing green tea flavor while the red bean paste adds a unique sweetness and textural contrast to it to make a great combo. A restaurant’s success isn’t just about good food. People will come back when there is efficient and warm service born out of well-trained and happy employees. A Singaporean regional food chain revealed its formula for success. Tiong Bahru Philippines, the first overseas franchise of a popular Singaporean restaurant chain, believes that employees should be well taken care of as it would with loyal diners. Customers can sense that a company who focuses on employee needs are more worthy of their trust. This is reflected on the satisfactory level of service which will entice them for a repeat visit. Tiong Bahru Hainanese Chicken restaurant opened in the Philippines before the pandemic. Sales climbed up during the lockdowns because the roast chicken and Hainanese poached chicken with ginger, chili and hoisin sauces were not only healthy but also affordable. Today, a single order of the signature chicken and rice combo costs P295. The local franchise chain has since opened seven outlets, mostly in malls, and continues to expand. Tiong Bahru Hainanese Chicken restaurant merited the Michelin Big Gourmand Award for serving top-quality food at affordable prices. The foods such as the fish head curry and tofu with chili sauce are prepared onsite for freshness instead of being delivered from a commissary. Aside from a gastronomic feast, tasty dishes and attentive service, Tiong Bahru Philippines is earning a reputation for looking after its employees by surpassing compensation and benefits. In other establishments, employees don’t get paid nearly as much as they deserve. The meager pay can lead them to take on long hours just to make ends meet. This could result in burnout or an imbalance of work and personal life. Burnouts avoided This year, the management introduced a 14th-month pay for all employees, building upon last year’s addition of the 14th-month bonus. This incentive has become part of the employee package. Beginning 1 September, employees will be getting comprehensive insurance coverage of up to P60,000 per ailment and P20,000 for outpatient expenses. The staff in the dine-in section will receive an average monthly take-home pay of P25,000 inclusive of service charges. Bigger outlets such as the 150-square meter Tiong Bahru restaurant in Eastwood Mall will provide as much as P35,000 salary. The management believes that a healthy wage and an adequate benefits package will make the employees feel that they are valued. When a company provides for its employees, they will be more content. They will be motivated to be more productive and more dedicated to customer care. Attention to guests will, in turn, invite more business. Moreover, capable and reliable staffers can spread the word that Tiong Bahru Philippines has a caring culture because the staffers are given respect. The management creates a safe and healthy workplace both physically and psychologically to avoid accidents on the job and burnouts. Indigenous upbringing helped children survive Amazon ordeal
by Hervé BAR Lost for 40 days in the Colombian Amazon, four Indigenous children survived eating seeds, roots and plants they knew were edible thanks to their upbringing. And it was in part down to the local knowledge of Indigenous adults involved in the search alongside Colombian troops that they were ultimately found alive. "The survival of the children is a sign of the knowledge and relationship with the natural environment that is taught starting in the mother's womb," according to the National Organization of Indigenous Peoples of Colombia (OPIAC). The four siblings survived a small plane crash on May 1 that took the lives of the pilot, their mother and a third adult. The family of the children clung to hope that the siblings' familiarity with the jungle would see them through. The "children of the bush," as their grandfather called them, survived eating yucca flour that was aboard the doomed plane, and scavenging from relief parcels dropped by search helicopters. But they also ate seeds, fruits, roots and plants that they identified as edible from their upbringing in the Amazon region, Luis Acosta of the National Indigenous Organization of Colombia (ONIC), told AFP. - 'Spiritual force' - Acosta, who took part in search operations, said the children were imbued with "spiritual force." That is a shared perception among Indigenous leaders, and Acosta noted that a guardian was to be posted outside the military hospital where doctors were attending to the children to help accompany them "spiritually." "We have a particular connection to nature," Javier Betancourt, another ONIC leader, told AFP. "The world needs this kind of special relation with nature, to favor those like the Indigenous who live in the jungle and take care of it." During the search, soldiers worked side by side with Indigenous trackers for 20 days. President Gustavo Petro praised what he called a "meeting of Indigenous and military knowledge" that he said showed respect for the jungle. Army helicopters broadcast recordings of the childrens' grandmother telling them in the Indigenous Huitoto language to stay put in one spot until rescuers reached them. "It was President Petro who brought us together," Acosta told local media, referring to soldiers and Indigenous experts. "In an initial meeting, eight days before our search began, the president told us we needed to go with the army because the army couldn't do it alone," he added. - A winning combo - More than 80 volunteers from Indigenous territories in the departments of Caqueta, Putumayo, Meta and Amazonas joined around 100 soldiers in what was dubbed "Operation Hope." It was an unusual union of forces. In many of Colombia's Indigenous territories, armed outlaw groups roam and easily coerce native peoples, who protect their lands with rudimentary weapons. Relations between Indigenous communities and the armed forces are also strained. But in the Guaviare department, rescuers from separate groups set their differences aside to work together. While soldiers planned operational details, native searchers held rituals to communicate with jungle "spirits," using mambe, a paste made of coca leaf and ash, as well as chirrinchi, a fermented drink. Using machetes, rescuers felled trees and marked them with spray paint to guide the children. Indigenous medicinal knowledge was also used to adapt to the difficult jungle conditions, treating scratches, splinters, insect bites, exhaustion and physical pain. The indigenous people have "worked in the rain, in storms and in many difficult situations, but always with the hope and spiritual faith that (the children) could be found," Acosta said.
