LOCAVORE AT ESTANCIA MALL A cozy, contemporary space ensconced inside the Estancia Mall in Pasig City, Locavore is given true Filipino touches with its warm woods, rattan chairs, rustic pendant lights and an expansive glass window that provides an exceptional view of the surrounding environs. And with the newly opened branch comes an expanded menu and new dishes exclusively in the Estancia outlet. For starters, have the crisp BBM or Bagnet, Buro and Mustasa — a platter filled with thinly sliced, crispy pork bagnet chips that you wrap in mustasa leaves (Samgyup style) seasoned with burong (pickled) hipon and burong mangga with gochugaru (Korean chili flakes). Follow it up with Bistek Pintxos, toasted bread decked with bistek-style beef tenderloin, grilled quesong puti, truffle aioli and red onions. We were thinking of madaling kainin (easy to eat) and something fun. Because samgyup is trending, we came up with pintxos.” The resto also has Bulalo Pintxos, roasted bone marrow with pickled labanos and pares jam; Yakitori Platter, grilled skewered chicken wings, chicken thigh meat, gizzard and liver served with annatto aioli, tocino butter, miso butter and spiced suka; Bagnet Chips, housemade bagnet chips served with spiced vinegar; and Inasalitos, inasal chicken with salsa, labuyo aioli served in lumpia taco shell. All these dishes are paired with seven new signature cocktail drinks, crafted by its in-house mixologist. Pahan says the new refreshing drinks heavily relies on the food being served at the restaurant. They complement the taste of the meals. Locavore serves alcohol and spirits. The drinks include Hardin, a hybrid between gin tonic and Tom Collins, with tonic water and botanicals and floral notes like blue pea and elderflower (which has a similar taste notes of lychee), garnished with rosemary and black pepper; Kinilig, a combo of Disaronno amaretto, honey, lemon juice and rum, with rice paper art design on top; Diwata, a blend of Bombay Sapphire gin with Giffard Lychee liqueur, sugar syrup and lemon juice, dressed with basil sprig and forget me not flower; and Antibayotiko, a whiskey-based mix of bourbon, ginger liqueur, honey and lemon juice. Locavore at Estancia Mall has a seating capacity of 120 people and targets bar goers in the area. It’s open until 1 a.m. from Wednesday to Saturday. The rest of the week, it follows the mall hours. OLIVE GARDEN AT THE VERVE A visit to the newly opened third branch of Olive Garden at The Verve in BGC, Taguig City, is a journey of discovery into a world of delicious and affordable pasta, bread, salad, chicken and pizza sensibilities. The menu is broad and touches base with all the departments of classic Italian-American fare. Upon arrival, diners are swiftly delivered a basket of freshly baked breadsticks, which are widely popular in all 900 Olive Garden stores all over the world, including the Philippines. They are buttery, a bit garlicky, moist and chewy. The unlimited breadsticks, including the never-ending soups and salads, come free with every order of an entrée. What a treat! Olive Garden first opened at the Mall of Asia on 12 September 2022 and at Glorietta 3 in Makati City on 9 January 2023. “It is, more or less, the same menu that we have for our first branch in MOA and also the same menu all over the United States,” Rechele Tiongson, chief operating officer of The Bistro Group, the company responsible for bringing in Olive Garden which was founded in 1982 in Orlando, Florida. “We never changed anything aside from modifying some of the portions that would fit the Filipino market, but the taste and flavor are the same. We use the finest ingredients like imported cheeses.” She adds: “Just to be clear, we did not reduce the portions but we introduce the smaller ones like solo version for those will smaller appetites. The big portions remain the same.” Browsing the menu uncovers more inviting dishes, such as the signature item, Tour of Italy (a huge platter of everything good — Chicken Parmigiana, Lasagna Classico and Fettucino Alfredo pasta), Amazing Alfredos (made from scratch using imported cheeses, not just heavy cream) and an Italian classic, Shrimp Scampi. Just recently, four new dishes were introduced — Mediterranean Chicken, Chicken Tuscany, Roasted Herb Chicken and Italian Braised Short Ribs, all served with a choice of mashed potato or steamed rice. “We are happy with the response of the public to Olive Garden,” shares Tiongson. “It was extremely unexpected when we first opened in MOA. We were busy for the next six months of the restaurant. The queue was really long. People had to wait for 30 to 45 minutes, which we felt bad for our customers, but that was how they responded to the first opening of Olive Garden in the Philippines.” Olive Garden’s vibe is casual, light and bright yet it is warm and comforting with olive green accents. The design of the interiors is an allusion to the Italian countryside through earth tones and natural textures. It can accommodate 150 people. From the moment we arrived and stepped onto the property to our experiences at the various outlets, even while waiting outside for our ride back to the hotel, and throughout our check-out process, the service we received at every step of the way was truly dedicated. Fraud ring targets global crypto pools
Online scammers have stolen more than $1 million from so-called cryptocurrency liquidity pools recently, according to cybersecurity system provider Sophos. Sophos released findings on a pig butchering operation through the use of fake trading pools of cryptocurrency. The report, “Latest Evolution of ‘Pig Butchering’ Scam Lures Victim in Fake Mining Scheme,” details the story of one of the scammed victims in the pools, named Frank, and how he lost $22,000 in one week after “someone” pretending to be “Vivian” on the dating app MeetMe contacted him. After Sophos X-Ops investigated Frank’s story, the team uncovered a total of 14 domains associated with the scam operation, as well as dozens of nearly identical fraud sites that, together, netted one “ring” of pig butcherers more than $1 million in three months. The scam takes advantage of the largely unregulated world of decentralized finance, or DeFI, cryptocurrency trading applications. These applications create “liquidity pools” of various types of cryptocurrencies that users can then access for trades. Those who participate in the pool receive a percentage of any fee paid when a trade is made, creating an enticing return on investment. To join a pool, participants sign an online smart contract that gives another account, typically the operators of the pool, permission to access participants’ wallets to facilitate trades. Fake pools, which pig butcherers are increasingly utilizing to siphon funds from targets, operate in much the same way. Liquidity pools cleaned up However, unlike legitimate pools, at some point these scammers “pull the rug” and empty the entire liquidity pool for themselves. “When we first discovered these fake liquidity pools, it was rather primitive and still developing. Now, we’re seeing sha zhu pan scammers taking this particular brand of cryptocurrency fraud and seamlessly integrating it into their existing set of tactics, such as luring targets over dating apps,” according to Sean Gallagher, principal threat researcher, Sophos. Very few understand how legitimate cryptocurrency trading works, so it’s easy for these scammers to con their targets. “There are even toolkits now for this sort of scam, making it simple for different pig butchering operations to add this type of crypto fraud to their arsenal. While last year, Sophos tracked dozens of these fraudulent ‘liquidity pool’ sites, now we’re seeing more than 500,” Gallagher said. Sophos X-Ops first learned of this liquidity mining operation from a victim named Frank. Frank had connected on the dating app MeetMe with a scammer hiding behind the persona of Vivian, a German woman supposedly living in Washington, D.C. for work. For weeks, Frank chatted with Vivian, who mixed her romantic promises with persistent attempts to convince Frank to invest in crypto. Eventually, Frank opened a Trust Wallet account (a legitimate app for converting dollars to cryptocurrency) and connected to the link to the liquidity pool site Vivian recommended. In reality, the pool site was fraudulent and utilized the brand of Allnodes, an established decentralized finance platform provider, as a cover. Between 31 May and 5 June, Frank invested $22,000 in the scheme. Just three days later, the scammers emptied Frank’s digital wallet. Frank, looking to recover his money, turned to Vivian, who advised him to invest even more in the pool to recover his funds and reap the “rewards.” While waiting for his bank to authorize a money transfer to Coinbase, Frank started researching what was going on and came across an article on liquidity mining from Sophos. At this point, Frank reached out to Gallagher for help. Even after Gallagher instructed Frank to block Vivian, she eventually found him on Telegram and continued her attempts to entice him into “continuing their investment,” going so far as to send a lengthy, emotional letter that was very likely created by a generative AI app. “What makes these sorts of scams particularly tricky is that they don’t require any malware to be installed on a victim’s device. They don’t even involve a fake app, like some of those we’ve encountered in other CryptoRom scams. This entire fake liquidity pool was run through the legitimate Trust Wallet app.” At one point, Frank even tried to contact Trust Wallet’s support to recover his money, but he connected with a fake support contact from the fraudulent liquidity pool site. There is no regulation of these pools, legitimate or otherwise, on these crypto apps. These scams succeed solely through social engineering, and the scammers are persistent. Vivian continued trying to contact Frank for weeks after he blocked her on WhatsApp. “The only way to stay safe from these scams is to be vigilant and know that they exist and how they operate. That is why Frank wanted to share his story. Users need be wary of anyone they have no connection with reaching out to them suddenly via any dating app or social media platform, particularly if the ‘person’ reaching out wants to move the conversation to a platform like WhatsApp and then discusses investing in cryptocurrency,” Gallagher said. Sophos has shared its data on this case with Chainalysis and Coinbase, as well as other threat intelligence professionals in the cryptocurrency space, all of whom continue to investigate. “People who believe they may be a victim of pig butchering or liquidity mining fraud are free to reach out to Sophos. BayaniPay expands North American reach
Backed by an additional funding round of $2.1 million, Filipino-owned financial technology firm BayaniPay is expanding its services in North America to better serve more Asian American immigrants. Speaking to reporters on Wednesday, BayaniPay CEO Winston Damarillo said the company will leverage the large concentration of Filipinos in Canada to grow its reach. Filipino immigrants in Canada recorded a population of almost one million in 2021, while Filipino immigrants in the United States or US numbered around 2 million, comprising more than 4 percent out of over 45.3 million US immigrants. “We aim to sustain this momentum and explore new territories. Our commitment towards improving and growing our platform is driven by the desire to make the lives of Filipinos easier, wherever they may be found,” Damarillo said. BayaniPay currently serves customers in California, Hawaii, New Jersey, and Alaska by allowing them to remit funds to their loved ones and make direct payments to service providers in the Philippines. Its platform allows customers to have easy access to a digital checking account, a debit card that maximizes their spending power, zero fee remittance fees, and market-leading forex rates. According to Damarillo, the company will utilize its new funding, which brought the total seed round of BayaniPay to $6.6 million to date, for the planned expansion. BayaniPay previously raised $4.5 million in seed funding, allowing it to scale its product features and explore new territories. During the first half of the year, BayaniPay saw its average transaction value surge to over P100 million per month, a huge jump from only P30.64 million in average transactions last year. Damarillo attributed this to the strong demand for cross-border payment solutions, including remittances as well as bill payments. BayaniPay thus targets to reach P1 billion in total transaction value before the end of the year. “We are on track to meet this milestone, as we continue to acquire more customers each month. Robot fried chicken: entrepreneur seeks to improve S. Korea’s favorite food
In fried-chicken-obsessed South Korea, restaurants serving the nation's favorite fast-food dish dot every street corner. But Kang Ji-young's establishment brings something a little different to the table: a robot is cooking the chicken. Eaten at everything from tiny family gatherings to a 10-million-viewer live-streamed "mukbang" -- eating broadcast -- by K-pop star Jungkook of BTS fame, fried chicken is deeply embedded in South Korean culture. Paired with cold lager and known as "chimaek" -- a portmanteau of the Korean words for chicken and beer -- it is a staple of Seoul's famed baseball-watching experience. The domestic market -- the world's third largest, after the United States and China -- is worth about seven trillion won ($5.3 billion), but labor shortages are starting to bite as South Korea faces a looming demographic disaster due to having the world's lowest birth rate. Around 54 percent of business owners in the food service sector report problems finding employees, a government survey last year found, with long hours and stressful conditions the likely culprit, according to industry research. Korean fried chicken is brined and double-fried, which gives it its signature crispy exterior, but the process -- more elaborate than what is typically used by US fast food chains -- creates additional labor and requires extended worker proximity to hot oil. Enter Kang, a 38-year-old entrepreneur who saw an opportunity to improve the South Korean fried chicken business model -- and the dish itself. "The market is huge," Kang told AFP at her Robert Chicken franchise. Chicken and pork cutlets are the most popular delivery orders in South Korea, and the industry could clearly benefit from more automation to "effectively address labor costs and workforce shortages", she said. Kang's robot, composed of a simple, flexible mechanical arm, is capable of frying 100 chickens in two hours -- a task that would require around five people and several deep fryers. But not only does the robot make chicken more efficiently -- it makes it more delicious, says Kang. "We can now say with confidence that our robot fries better than human beings do," she said. Investing in 'foodtech' Already a global cultural powerhouse and major semiconductor exporter, South Korea last year announced plans to plough millions of dollars into a "foodtech" fund to help startups working on high-tech food industry solutions. Seoul says such innovations could become a "new growth engine", arguing there is huge potential if the country's prowess in advanced robotics and AI technology could be combined with the competitiveness of Korean food classics like kimchi. South Korea's existing foodtech industry -- including everything from next-day grocery delivery app Market Kurly to AI smart kitchens to a "vegan egg" startup -- is already worth millions, said food science professor Lee Ki-won at Seoul National University. Even South Korea's Samsung Electronics -- one of the world's biggest tech companies -- is trying to get in on the action, recently launching Samsung Food, an AI-personalized recipe and meal-planning platform, available in eight languages. Lee predicted South Korea's other major conglomerates are likely to follow Samsung into foodtech. "Delivering food using electric vehicles or having robots directly provide deliveries within apartment complexes, known as 'metamobility', could become a part of our daily lives," he said. "I am confident that within the next 10 years, the food tech industry will transform into the leading sector in South Korea." 'Initially struggled' Entrepreneur Kang now has 15 robot-made chicken restaurants in South Korea, and one branch in Singapore. During AFP's visit to a Seoul branch, a robot meticulously handled the frying process -- from immersing chicken in oil, flipping it for even cooking, to retrieving it at the perfect level of crispiness, as the irresistible scent of crunchy chicken wafted through the shop. Many customers remained oblivious to the hard-working robotic cook behind their meal. Kim Moon-jung, a 54-year-old insurance worker, said she was not sure how a robot would make the chicken differently from a human "but one thing is certain -- it tastes delicious". The robot can monitor oil temperature and oxidation levels in real time while it fries chicken, ensuring consistent taste and superior hygiene. When Kang first started her business she "initially struggled" to see why anyone would use robots rather than human chefs. But "after developing these technologies, I've come to realize that from a customer's perspective, they're able to enjoy food that is not only cleaner but also tastier", she told AFP.
