Vive Versailles! A right royal welcome for British monarchs
For his first state visit as sovereign to France, which had to be postponed for six months due to riots, Britain's King Charles III will receive the gold standard of French welcomes -- a reception at the Palace of Versailles. The palace, which was the seat of the monarchy before the French Revolution of 1789, is now a museum, but it is still used by French presidents to host leaders they want to impress, from Queen Victoria to Vladimir Putin. 'Long live the king!' France, which beheaded its own king and queen, has a long-running love affair with the British royal family and over the past 170 years has often wined and dined them at Versailles. Emperor Napoleon III threw a ball for 1,200 guests at the royal opera in Versailles when Queen Victoria visited in 1855, the first trip to Paris by a British monarch in 400 years. In 1938, as Europe stood on the threshold of another world war, King George VI and Queen Elizabeth II swept into Paris to cries of "Long live the king!" and were too hosted at Versailles, in this case for lunch. Less than two decades later, President Rene Coty pulled out all the stops for the young Queen Elizabeth, Britain's longest-serving monarch who died last year, on her first state visit to France with her husband Prince Philip. After a night at the Paris Opera, the pair had lunch in Versailles' Hall of Mirrors, where the World War I reparations treaty was famously signed in 1919. Fondness for foie gras The land where food is king has served up an eye-popping array of delicacies for its British visitors. But Victoria, known for her voracious appetite, had only faint praise for French cuisine, writing that while "the fowl and bouillon are quite delicious" French cooking has "less variety than ours". Her son Edward VII was treated to a 16-course feast in 1903, complete with fattened chicken, quail and glazed ducks. By Elizabeth II's time, the menu had been slimmed down to four or five courses, with one recurring staple: foie gras. The Francophile queen had a fondness for the controversial pate obtained by force-feeding ducks or geese, but it is unlikely to feature on the menu for Charles, who has banned it from his household. Open for business Versailles has hosted many distinguished commoners as well. In the post-war years, President Charles de Gaulle used it to host John F. Kennedy and Richard Nixon when they were US presidents, as well as the Shah of Iran. Socialist president Francois Mitterrand threw open the palace gates to communists when he used it to host Soviet leader Mikhail Gorbachev. By contrast, Nicolas Sarkozy and Francois Hollande rarely used Versailles, with the exception of late Libyan leader Moamer Kadhafi for the former and Chinese President Xi Jinping for the latter. In 2017, before Moscow's invasion of Ukraine turned him into a pariah, Russian President Vladimir Putin was welcomed there by his French counterpart Emmanuel Macron. If he wanted to, Jake Ejercito could probably release a book on parenting filled with just exchanges he's had with Ellie, his pre-teen daughter with Andie Eigenmann. Her often deadpan one-liners to dad Jake's queries and all sorts things he tells her are a hilarious glimpse into their easygoing relationship. I guess you could call them (ahem) Ellie-raptions. (Apocryphal stories about Erap's supposedly less-than-smart reputation fueled the joke book, "Eraptions: How To Speak English Without Really Trial" by Reli German and Emil Jurado was a bestseller.) Will Locsin soar over or crash into Great Wall?
The President’s appointment of Teodoro L. Locsin Jr. as Special Envoy to the People’s Republic of China for Special Concerns — a post he will hold on top of his day job as Philippine Ambassador to Great Britain and Ireland — is a daring, if astute, move. Daring because Locsin is not known to hold back with either word or deed to express what he feels strongly about, e.g., the dirty finger, and astute because in naming Locsin, the President couldn’t have found a better, smarter, and more seasoned man to represent Philippine interests with singular loyalty and devotion to the republic. Locsin was, of course, the former dispensation’s Ambassador to the United Nations where he, fluent as he is in Spanish, enjoyed congenial relations and camaraderie with UN Secretary-General Antonio Guterres and the rest of the Spanish-speaking members of the Latin America bloc in the multilateral organization. The former journalist (his father, Teodoro M. Locsin Sr., was publisher of the legendary Free Press) and Makati congressman was subsequently appointed by then President Duterte Secretary of Foreign Affairs, during whose tenure 45 diplomatic protests were filed against Beijing, including over a law that allows the China Coast Guard to fire on foreign vessels in the disputed South China Sea. The Philippines, in fact, during Locsin’s term as DFA Secretary was the first country in the world to file a diplomatic protest through a note verbale in January 2021 against China’s Coast Guard Law. As Foreign Affairs Secretary, he laid claim to “assiduously protesting every infringement on Philippine territory and sovereign right, as well as Chinese actions that amounted to provocation, threats or coercion.” The DFA, with Locsin at its helm, raised the South China Sea dispute in the Association of Southeast Asian Nations and other fora even as it continued to engage China through the Bilateral Consultation Mechanism on the South China Sea. His accomplishments included the two diplomatic protests filed by the DFA in May 2021 over the “incessant, illegal presence” of Chinese militia disguised as fishermen in fishing boats and the Chinese Coast Guard “shadowing, blocking, conducting dangerous maneuvers and radio challenges against Philippine Coast Guard vessels in the WPS,” which an irate Locsin accompanied with a separate post on Twitter saying, “China my friend, how politely can I put it? Let me see. O.. GET THE F**CK OUT. What are you doing to our friendship? You. Not us….” He eventually apologized to Chinese Ambassador Huang Xilian for his intemperate language after then-President Duterte reminded him that only he (Duterte) could spew profanities while engaging in diplomacy. Whatever advice President Marcos may have received before he named Locsin to the post must have detailed certain actions by the former DFA chief towards the Chinese. That these did not deter the President from naming Locsin anyway signifies that he sees more in Locsin than his capacity for displaying outrage in a provocative manner. Many have lauded the choice of Locsin by the President. Indeed, we hold our breath as Locsin sets out to engage with the top Chinese officialdom in Beijing. We are curious to see what charms and ingenious diplomatic skills he will pull from his sleeve and whether these will make the Chinese finally accept, for instance, the 2016 ruling of the Arbitral Tribunal that said China has no lawful claim over waters determined to be part of the Philippines’ exclusive economic zone. It will be interesting to see if Locsin will be able to clinch his objectives and score well enough to make him, and the country, feel like soaring over — instead of crashing into — China’s Great Wall. A provincial breakfast
For health, a doctor-friend advises we should drink more of our native pure chocolate beverage instead of coffee. My doctor-friend says current research shows drinking native pure cacao builds up stem cells, cells that, as I’m often confidentially told, are extending the shelf life of some of our more colorful geriatric politicians. But other than medical counsel for regenerating tired old bodies, his advice had me nostalgic for the laid-back charms of my hometown, Cebu City, in the 1960s and my childhood breakfasts. Back then, the multi-layered aroma of the frothy sikwate, Cebuano for native chocolate drink, wafting in the quiet dawn air was a sheer, inimitable pleasure. Prepared by my mother, the sikwate bubbled in a terracotta Grecian pitcher-shaped, charcoal-bottomed batidor sitting precariously on a single earthen stove, fired up by bakawan or mangrove wood. If I happened to be up at the crack of dawn, I would watch my mother vigorously palm-rolling the wooden long-handled bolonea to dissolve the pure cacao tableya and brown sugar in boiling water, to achieve the sikwate’s velvety smoothness and lip-smacking frothy glory. Once poured into large thick-walled glass tumblers — those working-class glasses often found in Chinese restaurants — the sikwate came served with generous servings of the Cebuano delicacy puto maya and succulent ripe mangoes. Itinerant vendors sold the banana leaf-wrapped, triangle-shaped puto maya, but the sweet mangoes came from the market, likely sourced from the city’s abundant mango groves in the Guadalupe district, now a distant memory. Puto maya is steamed sticky glutinous rice or malagkit. Cooked for an hour with coconut milk or gata, sugar, salt and ginger — fresh ginger juice gives the puto maya an added kick — the delicacy was scooped straight from the steamer and served on a plate when bought from the public market stalls. If puto maya wasn’t available, there was always my Lola Isang’s celebrated budbud. Lola Isang, my late paternal grandmother, had a singular way with heirloom budbud recipes, just as my late mother had with cakes, breads, tarts, pies, ensaimada, napoleons, and exquisite silvanas dusted with cashew bits. Budbud is simply sticky rice mixed with coconut milk, sugar and salt steamed over low heat, then hand-rolled to about five inches long and wrapped in banana leaf. Budbud is the simplest food in the Cebuano rice-cake universe, but if my Lola Isang felt fancy enough when she woke up at 3 a.m. to make them she would roll them together with diagonal violet strips like a barber’s pole, which I later found out wasn’t ube but was still malagkit, only colored. And if Lola Isang had some millet around, which in Cebu came in the form of kabog from Catmon town in Northern Cebu, she would make one of Cebu’s unique delicacies, budbud kabog. Kabog is Cebuano for bat and for the small-seeded cereal plant that grew wildly on Catmon’s mountainous terrain, so named because bats feasted on them. Kabog seeds are coarse and bland. But once pounded and cooked with coconut milk and sugar it amazingly transforms into budbud kabog, eagerly sought after by aficionados, mostly sabungeros. Yet, all these delicacies were merely breakfast starters. In 1960s Cebu City, Cebuanos had two official breakfasts: The light painit in the early morning hours and the much later heavy pamahaw. Pamahaw in other households, of course, would have the more familiar scrambled eggs and Brazilian corned beef, but I definitely remember eating with gusto ma-is for pamahaw. Ma-is is of course corn. But the corn here is not on the cob but well-milled corn grains steamed to the consistency of rice. Unfeasibly as corn now sounds as a staple, but tummy-filling ma-is was definitely pamahaw, especially if paired with dangit or little round bite-size Cebuano chorizos or the rich fishy flavor of ginamos or partially fermented bolinaw (anchovies), of which Jose Rizal once insisted to a Spanish historian that Filipino fermented fish dishes were neither stinky nor rotten. An Unforgettable Burger Experience

We promised ourselves to explore new neighborhoods and visit new places other than those we frequent. So, we committed to our adventure and went on a discovery spree into Silom (Saladaeng), Chinatown, Talad Noi, Ekkamai, Taling Chan, and visited a new mall called Icon Siam. All neighborhoods had their own unique charms that flaunted an abundance of sights and flavors. One of our most unforgettable meals during this trip was surprisingly not Thai food. It was a unique burger experience at a hidden kitchen studio in one of Bangkok’s hippest neighborhoods called Ekkamai. Homeburg is the brainchild of Taiki Rattanapong Tsubota who started his journey with a burger shop that went viral as he only took an extremely limited number of customers to cook and serve only four crafted burgers per day at a price that the customers are willing to pay. With a months-long waitlist and its popularity skyrocketing into the globalsphere, it was a shock to everyone that Homeburg version 1.0 closed its doors. But fast forward to today, he reopened Homeburg with an open kitchen concept and served only eight seats at a time at 2 p.m., 5 p.m. and 8 p.m. daily and will only accept reservations of two, four or eight. If you were three people, you would have to pay for four. But when we got to Bangkok, I got a message from Taiki saying their oven broke down so he would have to move or cancel our booking. I refused. I told him I had faith that the oven situation would be resolved and thankfully, it was! So, we were able to experience all the magic that Taiki has passionately worked on to come up with a menu that’s completely divine. His kitchen is literally his lab where he combines his creativity with science as he creates new dishes and tries to perfect existing ones.
