Stevie’s specialties
For Steve “Stevie” Villacin, it took only one specialty dish — Hainanese chicken — to get him started on his home-based food business in 2009. He had just graduated from the International School for Culinary Arts and Hotel Management, and his cousin Claudette Vitug was responsible for “pushing him to start a home-based food business by accident.” Knowing that Stevie cooked a mean Hainanese chicken at home, she requested him to make her a set to gift their friend Ingrid Chua, the BagHag, for Christmas. Steve obliged, whipping up a whole Hainanese chicken and packaging this with its traditional sauces (ginger sauce, sweet soy sauce, and chili sauce) and matching Hainanese chicken rice. Claudette sent this to Ingrid, who loved it so much that she blogged about it the following day. Other bloggers and influencers as well as journalists picked up from there and wrote about Stevie’s special Hainanese chicken. Word got around, orders doubled, tripled, and, lo and behold, before he knew it, he had a home-based food business to run. The business happened by accident, yes, but the orders did not come by accident. They were conscious choices because Stevie’s product was—and continues to be—really good. His signature dish, Hainanese Chicken Set, is a whole chicken, about 1.5 to 1.7 kilograms by weight, comes with five cups of chicken rice (with option to order additional rice at P65 per cup), and a complete set of sauces (topping sauce, ginger sauce, sweet soy sauce, and chili sauce), for a reasonable P1,500 per set. Stevie has also developed a variation of rice called Olive Rice. It is basically traditional Hainanese chicken rice sautéed in extra virgin olive oil with chopped black olives. Should customers prefer Olive Rice over traditional chicken rice for their Hainanese Chicken Set, the price is adjusted by only P100. The set thus costs P1,600, with extra cups of Olive Rice priced at P75 per cup. A number of these have become top-sellers as well, such as Fried Shrimp Lumpia with Bacon and Served with Sweet Chili Sauce (shrimp with bacon rolled around it, then wrapped in lumpia wrapper and fried); Asian Beef Tenderloin Salpicao (Australian or New Zealand beef tenderloin marinated with Asian seasonings then seared and topped with fried garlic, served with buttered vegetables and mashed potato); and Garlic Barbeque Pork Ribs (two slabs of tender pork ribs with garlic barbecue sauce). Stevie’s menu has become so wide that it covers all categories now — salads, appetizers, entrées and pasta. Salad choices are Chicken Oriental Salad with Hoisin Dressing Black Pepper Crusted Tuna Salad with Asian Dressing, and Grilled Pork Belly Salad with Tamarind Dressing. As for the appetizers, there’s Fresh Vietnamese Spring Rolls with Peanut Sauce; Seafood, Chorizo and Chicken Paella, Callos, Osso Bucco Served with Pasta, and Baked Iberian Chicken. For pasta, which is a one-dish meal often ordered on its own by customers, Stevie has four choices — Baked Rigatoni with Italian Sausage and Eggplant, Tuyo Pasta, Baked Chicken a la King Pasta, and Garlic Noodles. The latter (spaghetti sautéed in garlic butter and extra virgin olive oil with Asian seasonings and topped with Parmesan cheese, browned garlic and chopped scallions) has also become a signature dish often ordered to go with Baked Prawns. So, it could stand on its own, Stevie recently added a variation of garlic noodles to the menu. It is called Garlic Crab Noodles, and has lots of crabmeat on top of the garlic noodles. Fashion seeks dedicated followers with influence online
Once kept firmly at arm's length by the fashion world, influencers are now courted alongside big celebrity names by emerging talents keen to leverage their millions of online followers. "Influencers will have a leading role in building the legitimacy of creators," Delphine Dion, professor at France's ESSEC Business School, told AFP. "It is thanks to them that many designers will manage to break through." The cream of TikTok and Instagram flocked to Masha Popova's show on Sunday as part of London Fashion Week. The young Ukrainian designer counted TikTok superstar Abby Roberts, who has more than 16 million followers, among her guests. "I was in the front row with six other influencers, so I think we are doing well," said TikTok, Instagram and YouTube content creator Emma Winder after the show. Avant-garde To be a fashion influencer who matters, you first have to be "trusted by the big names" in the industry, said Dion. Next you can build a name for yourself as someone with "extremely cutting-edge tastes who can help new fashion players emerge". "It's exactly like the avant-garde dynamics you get in art. You look for the very niche to show you are even more fashionable than the rest," she added. The phenomenon is particularly visible on the catwalks at London Fashion Week, known worldwide for giving emerging talents a platform. Fashionable influencers and stars such as Zendaya, Billie Eilish, Hailey Bieber or Kylie Jenner have been seen wearing outfits by the new generation of designers including Masha Popova, Di Petsa, Chet Lo, Feben, or Yuhan Wang. Social media content creators can also benefit from a good engagement rate, which measures how well their posts interact with their community. An influencer with a high engagement rate posting a photo, dressed by a young label, is more likely to generate sales for the brand. 'Everyone welcome'? Competition between traditional media -- including specialist fashion magazines -- and former fashion bloggers who are now influencers on TikTok, Instagram or YouTube is not new. The influential British journalist Susie Lau began with her fashion blog "Style Bubble" in 2006. Now she writes notably for the British magazine Pop and The Business of Fashion and is also followed by nearly 700,000 people on Instagram. In an article published in Grazia in 2017 titled "Everyone should be welcome in fashion", she said she regretted the "negative connotations" that had attached themselves to fashion bloggers, influencers and content creators. Dragon boat race kicks off ‘Higalaay’
CAGAYAN DE ORO CITY — The Cagayan de Oro City government on Saturday morning kicked off a 2,000-meter dragon boat competition at the Cagayan River, with teams from the Philippines, Hong Kong and Malaysia participating. City Administrator Roy Raagas led the opening ceremonies of the event at Isla de Oro. He said 17 local dragon boat teams and teams from Hong Kong and Malaysia took part in the competition. The two-day competition is one of the highlights of the “Higalaay Festival 2023,” the city’s annual fiesta celebration. On 28 August, a religious fluvial parade will highlight the month-long festival. The parade will start from Puntod in Macajalar and end at Duaw Park near the St. Augustine Cathedral. Nick Jabagat, head of the City Disaster Risk Reduction Management Office, said security measures are in place for the mass gathering that will start with the 2,000-meter dragon boat race. He said drones are not allowed to fly over the areas of the festivities, but bloggers and news reporters covering the events are given specific areas where they can pilot their drones. Russian occupiers clear Ukraine town of ‘saboteurs’
Ukrainian “sabotage groups” have temporarily infiltrated a Russian-held town in the Kherson region, its Russian-installed governor said on Friday. The saboteurs crossed the Dnipro River and hid on the outskirts of Kozachi Lageri before being cleared out, Vladimir Saldo said. “As of today, the Kozachi Lageri area has been completely cleared physically — there is no Ukrainian military there,” he added, in comments published by the Russian news agency TASS. Prior to Saldo’s comments, Ukraine’s deputy defense minister Ganna Malyar confirmed that “certain (Ukrainian) units performed certain tasks” on the left bank of the Dnipro river in Kherson but gave no details. Russian military bloggers also said last week that Ukrainian detachments were present in the town and were shelling there, but that Moscow’s forces were still in control of the settlement. Myrna Segismundo: Chef to ABS-CBN stars, bigwigs
All showbiz stars and talents, as well as journos and v/bloggers, who have attended a media conference at the ABS-CBS compound in South Triangle, QC, most likely may have done so at the cozy and classy restaurant on the 14th floor of the building there. But were they ever aware that the building is called the Eugenio Lopez Jr. Communication Center and the restaurant goes by the mysterious name 9501? If they knew those two names, would they also know the name Myrna Segismundo? Most likely, no unless the journos and v/bloggers who cover showbiz also go to lifestyle media events. Segismundo is one of the country’s foremost chefs of international renown. She was managing director of 9501 for almost 20 years,with the rank of vice president. Security Bank, the Zonta Club of Makati and a group known as Environs recently cited her among their Bravo Empowered Women Awards recipients. [caption id="attachment_166629" align="aligncenter" width="666"] CHEF Myrna Segismundo | Photograph Courtesy Of Relaxlangmom.com[/caption] First project The private 9501 restaurant was conceived in 1995 as the first project of the year, which is why it was given that name by then ABS-CBN head Gabby Lopez, a son of “Kapitan Geny,” who sat on top of the broadcast empire almost up to the time it lost its franchise (Gabby is legally Eugenio Lopez III and is now the chairman emeritus of ABS CBN). The 9501 corporate dining facility produced everything from weekday lunch buffets, formal haute cuisine dinners and board meeting meals to celebrity-studded press conferences. It was never opened to the public, only to ABS-CBN employees and their guests. In August this year, the restaurant ceased operations but went on to be a venue for media conferences with goods catered by other suppliers. That was where Hori7ons (the number stands for “s”) was launched as a K-pop-inspired boy group managed by ABS-CBN with a Korean company. The contract signing of transwoman talent KaladKaren was also held at 9501 weeks ago. Frequent diner Monchet Olives, Gabby Lopez’ s former chief executive, said in an interview that he has never forgotten the very first meal served at 9501 in 2001, with just Gabby Lopez and himself seated at table 001 in the corner: rack of lamb, potato purée reminiscent of Alain Ducasse, gazpacho and the famous quezo de bola cheesecake — prepared by Chef Miguel Yadao who was one of the chefs Segismundo took along with her to 9501 from another private restaurant, PCI Bank’s the Sign of the Anvil. “Sitting there in the corner, window glass on both sides, overlooking Quezon City… It was a sunny day, you could see Manila Bay. I said, wow, this is ABS-CBN,” Olives said. Gabby Lopez was a frequent diner at 9501, usually entertaining guests or meeting with company executives in the wine room. Segismundo, in another interview, remembered Lopez as a “flexible” diner who loved good wine and enjoyed Japanese, Italian, French and especially Mediterranean fare, and occasionally Filipino. The 9501 chefs could prepare any kind of cuisine, but Segismundo was most proud of the prominence of Filipino food there. Many of its most famous dishes came from the Sign of the Anvil, including the bestselling Turon, Quezo de Bola Cheesecake, Potato Bread and Adobo Paté. In fact, 9501’s bestsellers were almost all Filipino, including its Chicken and Pork adobo and Beef Tapa — “in the service of Filipino food,” she recalled in one interview. Segismundo started “dissecting and deconstructing” traditional Filipino dishes with her chefs during her Anvil days, creating her iconic Lechon Roulade (using suckling pig, not liempo) in 1995, years before the lechon roll trend came about. Lecturer on Filipino cuisine The Christmas parties of ABS-CBN executives and employees were held at the restaurant, all the parties of the bigwigs like the birthdays of Gabby Lopez and ABS-CBN top executive Freddie Garcia, and “birthdays ng lahat ng mga sikat,” as Olives once put it. A graduate of Hotel and Restaurant Management of the University of the Philippines, Segismundo began her professional career at the Waldorf Astoria Hotel in New York City, USA. After several years, she went back to Manila and headed Sign of the Anvil. Under the sponsorship of the Department of Foreign Affairs, she has held demonstrations and lectures abroad to promote Filipino cuisine in countries like Spain, Portugal, France, Netherlands, Japan and more. She became the first ever Filipino lecturer on Filipino cuisine at the Cordon Bleu in Paris and Filipino presenter in the prestigious Madrid Fusion in Spain. She has written several books such as the The Party Cookbook and Philippine Cuisine – Home-cooked Recipes Wherever You May Be and co-authored Kulinarya (A Guidebook to Philippine Cuisine). She is known for promoting heritage recipes while also transforming them into contemporary interpretations without losing their authentic taste. She was editor of Food Magazine of ABS-CBN and the founder of the Doreen Fernandez Food Writing Awards, an annual food writing competition which aims to encourage food writing and research in the country. Most importantly, she developed the Kulinarya Program of the Department of Tourism to teach the rural folk basic cooking, service and accounting concepts to help uplift their lives and their families. Tastes and flavors Instead of saying certain Filipino dishes are “like” a particular dish from a different country, Segismundo encourages Filipinos to describe them through tastes and flavors. “Talk about our vinegars, our citruses — ingredients that are indigenous to us. Dishes that are truly Filipino that will have a universal appeal.” Meanwhile, the other awardees of Security Bank and Zonta are Celia Baltazar-Elumba for Arts, Culture and Heritage; Lourdes Delos Reyes for Business and Entrepreneurship; Jennie Jocson for Education; Cheryll Ruth Soriano for Media and Public Affairs; Rebecca Angeles for Social Services; Maria Caterina Cristina Lopa for Sports; and Rose Maria Mendoza for STEM. An ‘artist’s’15 minutes of fame
A question of freedom of expression or outright blasphemy? Social media and its ardent followers recently engaged in animated commentary, some amusing, others vitriolic, when drag queen Pura Luka Vega, dressed up to imitate Jesus Christ, performed before a noisy and possibly inebriated audience that sang along with the “star,” a pop version of the church hymn “Ama Namin” in a crowded venue that appeared to be a bar. The engagement drew a flurry of protests, principally from the country’s Catholic faithful. But what did Vega expect? The Philippines is, after all, a country with about 78.8 percent of the population identifying themselves as Roman Catholics based on the 2020 census. While some sectors proclaiming themselves as vanguards of the arts expressed their support for Vega, a participant in a contest featuring drag queens, the majority of the comments, some of them from those who are not even Catholic or “religious,” condemned the act and demanded an apology from the person at the center of the controversy. Many said what he did was “blasphemous, offensive, disrespectful.” Several senators openly denounced his act, with one saying the performer could face criminal charges. Sen. Juan Miguel Zubiri said Article 201 of the Revised Penal Code punishes “those who offend any race or religion in the performance of obscene or indecent plays, scenes, acts or shows in theaters, fairs, or any other place.” The law imposes a jail term and/or a fine on violators. “As a woman of faith, I admit I find this regrettable. However, I also caution against the use of this incident to deny rights and protections to a community that has long been marginalized and excluded,” Sen. Risa Hontiveros. said For his part, Sen. Aquilino Pimentel III said Vega “should think of some other way to make himself known and not resort to gimmickry.” On the other hand, Bataan Rep. Geraldine Roman, the first Filipino transgender lawmaker, warned Vega not to use the gender card in his defense. “Do we really need this kind of provocation? What is the contribution of this to LGBT rights?” Roman said. She added that invoking the performance as a constitutionally guaranteed freedom of expression is not absolute. She even dared the artist to do what he did to other religions with less tolerant views to see how far he could go. Pope Francis, the first pope, has criticized laws that criminalize homosexuality as “unjust” and advised Catholic priests to welcome LGBTQ people into the Church. My take on the gender issue is probably not as magnanimous as that of the pope. I am a conservative Catholic, meaning I am quite rigid in interpreting/differentiating the male from the female. For me, there are no “in-betweens.” But it does not mean that I do not respect our fellowmen who identify themselves with a gender that is not what they were born with. I respect them so much and would protect them as I would protect my children. But mind you, respect is a two-way street, so let us leave it at that. Meanwhile, the Catholic Bishops’ Conference of the Philippines said it was not inclined to press charges against the artist, adding that it was enough that he got the message that what he did was wrong. Although Vega said he apologized “to those who were offended by his performance,” it didn’t sound like he meant it because he added that he would not stop expressing his art, and it was his way of practicing his faith as a Catholic, and it was a form of worship anyway. In a bar before people obviously having a good time? At the same time, he said it was some healing process for him for having experienced exclusion from the Church because he is gay. Huh? The logic escapes me. Vega’s imitation of Christ also drew the ire of local government officials in Gen. Santos City, who recently declared him “persona non grata,” meaning there’s no welcome mat waiting for him in the city. Plucked from obscurity, Vega has become an instant celebrity of sorts and apparently basks in the spotlight. A concept introduced by the late American visual artist Andy Warhol who said, “Everyone will be world-famous for 15 minutes,” it implied the fleeting nature of being a “celebrity.” We see this phenomenon now with the surge of bloggers and vloggers flooding all social media platforms, from taho vendors to movie stars to various hangers-on, retired police officers, etc. All one needs is a cellphone with a decent camera. Some years ago, some people (others quite gleefully) announced that newspapers were dead. Then came the slew of online platforms that gave birth to what they called “new media.” Underneath all these, came the thought that, of course, newspapers are dead. Years later, and a pandemic, to boot — newspapers are still running, still the most credible source of news and information. The digital natives may never understand the reason some people still turn to the good ol’ “rag,” as it is sometimes called, whether in jest or derogatorily, but it is simply because newspapers are based on something quite basic: Journalism. Journalism — defined by the American Press Institute as “the activity of gathering, assessing, creating and presenting news and information. It is also the product of these activities” — is a craft. It takes training and experience to do good journalism. It takes experience to be a credible journalist. That is why, back then, when paper journos gathered to complain about the preponderance of bloggers in their midst, some would hit it on the mark: Why compare at all when there is really not much comparison? Simply put, broadsheets are not blogs — and never the twain shall meet. They can, however, co-exist. This is precisely the idea behind this paper’s transition from pure print media to an omnimedia organization. Embracing technology — welcoming change and not resisting the results of these changes — led Daily Tribune to traverse a path it did not know before. Over two decades ago, the newspaper was born. It then developed its own website. Then five years ago, under new management, it went into other digital platforms. Through all these, one thing that the paper retained was its commitment to the Filipino people — the core of its calling. Today, Daily Tribune has been recognized anew for its bold and fearless stance. At the 15 June awarding of the Pro Patria Journalism Awards by the Rotary Club of Manila — the first Rotary Club in Asia and the most distinguished for its “star-studded roster of members,” veritable icons in their fields — it received a trophy and plaque as Newspaper of the Year. Pro Patria means “for one’s country”. Daily Tribune President Willie Fernandez spoke about the faith it takes to take on the newspaper business with a commitment to good journalism, indeed, “for one’s country.” He said, “Many times, I have encountered people who wondered how long we would last — and I mean not just those doubting our reasons for staying, but also those who could not see our reason for being.” Like everyone who had stayed true to the call, he added, “I take pride in having stayed true to the Daily Tribune’s DNA of independence. Through four administrations, we boldly reported on issues that many times put our lifeblood at risk. “Thank you for recognizing the effort and determination it took to provide our readers with, as you so describe — ‘the fearless and consistent exposé of anomalies and irregularities both in the public and the private domain, investigating and reporting fairly and truthfully to enable citizens to be vigilant and participatory in forming collective censure and judgment.’” It is not easy, but it can be done. Wide-ranging partnerships define the new ABS-CBN
Here’s proof that ABS-CBN has been seriously taking itself in its new avowed role as a content supplier to the entertainment industry as well as online media: Since May of last year, the Lopez enterprise has been a major partner of Pinoy Interactive Entertainment, a company that has begun to make its mark on the entertainment scene with its acronym PIE. Billed as the country’s first multiscreen, real-time interactive channel, PIE is a collaborative project of ABS-CBN, BEAM, 917 Ventures and KROMA Entertainment, which boasts of being “tradigital,” meaning engaged in creating traditional and digital outputs. BEAM, KROMA and 917 Ventures are all under Globe Telecom. ABS-CBN’s involvement with PIE is overseen by the towering (as in basketball player-tall) Jamie Lopez, the company’s head of digital business. Ian Monsod, once known as a theater actor and music man, heads BEAM. He is the son of the famous and influential couple Christian Monsod, one of the framers of the 1987 Constitution, and renowned economist Winnie Monsod. Interaction with the company’s shows is mainly through digital devices. On its second year, the interactive channel promises a platform where people can increase their chances of winning while having fun by simply clicking on their mobile phones or engaging via the website. Or as its tagline puts it: “Pindot PIEnalo ka dahil kada pindot, PIEnalo ka more!” ABS-CBN stars Stars from ABS-CBN topbill many of PIE’s shows. For instance, Sinong Manok Mo? is headlined by momshie and pop-culture icon Jolina Magdangal, joined by It’s Showtime “Ate Girl” Jackie Gonzaga and comedian Eric Nicolas. The seemingly suddenly famous Jennica Garcia of the ABS-CBN series Dirty Linen cannot be happier that Pie Channel recently also gave her a chance to co-host Ur Da Boss with Melai Cantiveros (Magdangal’s co-host in the morning show Magandang Buhay). So let’s all hope her being made a mainstay in the PIE show Mga Kwento ng Dilim can lead to a series on ABS-CBN, PIE or elsewhere. Angeline Quinto, meanwhile, hosts The Chosen One (TCO): Kakatacute an interactive piliserye with comedian Chad Kinis. The show’s weekly elimination show is hosted by actor Jameson Blake and reality show alum Karina Bautista. Hence, it’s taken on partnerships here and abroad, such as with Amazon Prime Video to syndicate a TV series, and a distribution deal with India’s MX Player. It also has partnerships with Netflix, Hong Kong-based Viu and Youtube. “We decided to shed off all assets not relevant to storytelling… The new ABS-CBN is learning to partner with other platforms,” Katigbak added. ABS-CBN’s partnerships on the domestic front include a milestone deal with its media rival, GMA Network, Inc. The two signed a deal to produce a teleserye, and the Kapuso network can now use ABS-CBN’s iWantTFC streaming platform to widen its international reach. ABS-CBN has also inked content partnerships with the Pangilinan-owned TV5, PIE Channel, AMBS and the A2Z channel founded by Bro. Eddie Villanueva.
