Power and food. These are not usually spoken in the same sentence, but hey, they go hand in hand. Last September, First Lady Liza Araneta-Marcos posted on her official Facebook page a photo showing her at the groundbreaking ceremony of the new catering area in Malacañang. No other details of the project were released. The post got mixed reactions from netizens. However, despite the praise and criticisms of said post, it somehow got us into thinking — who are the people behind the important functions of each and every chief executive living in the Palace? Hands down, Glenda Rosales Barretto comes to mind. The one and only doyenne of Philippine cuisine. She of the Via Mare fame. From Ferdinand Marcos Sr. down to Ferdinand Marcos Jr., Barretto presided over numerous state dinners in Malacañang. The most recent was the inaugural ball of the 17th president of the Philippines, Ferdinand “Bongbong” Marcos Jr. Barretto is caterer extraordinaire well-known for reinventing and refining Filipino dishes fit to be served at the highest tables in the land. During PBBM’s inauguration, she served savory chicken soup with ginger, lemongrass and green papaya (more like a deboned chicken tinola), prawn in roasted coconut cream, seared prime beef tenderloin with kaldereta sauce and guava-basil sorbet. Barretto is also popular for her humba (a Visayan braised pork similar to the classic adobo), crispy adobo flakes (ultra crunchy and extra flaky dish using chicken, beef or pork), pancit luglog, puto bumbong and bibingka. Via Mare, founded in 1975, has a well-established and long-standing reputation of being the choice concessionaire to do banquets for heads of state and international guests in the Palace serving traditional flavors. It can be recalled that Barretto rose to prominence when she catered the silver wedding anniversary of President Ferdinand and Imelda Marcos, and soon after became the official caterer of the Palace. Fores recently catered the state dinner for Czech Republic Prime Minister Petr Fiala, the first European prime minister to visit the country under the new administration to discuss trade relations and mutual cooperation. The Asia’s Best Female Chef also served a delectable Filipino spread before the men and women of the diplomatic corps during the last vin d’honneur in Malacañang to celebrate the 12 June Independence Day. In 2016’s vin d’honneur, the last major function of the Aquino administration, Fores’ Cibo presented a Filipino buffet of three kinds of longganisa, toasted adobo flakes and corned beef flakes. Fores, who’s been in the food business for more than 30 years, has also prepared presidential dinners for King Juan Carlos and Queen Sofia, US Presidents George Bush and Barack Obama and Prince Albert of Monaco in Malacañang state dining room. Fores is the first cousin of former senator and interior secretary Mar Roxas, who is the second cousin of First Lady Liza Araneta-Marcos. Chef Jessie Sincioco Jessie Sincioco, dubbed the “Papal Chef,” is still the most in demand chef for fine dining and fine catering today. She has served the dining pleasure of Presidents Corazon Aquino, Fidel V. Ramos, Joseph Ejercito Estrada, Gloria Macapagal-Arroyo, Noynoy Aquino and Rodrigo Duterte. She catered the inauguration lunch of PBBM for the diplomatic corps at the National Museum, serving smoked milkfish on toast with bihod, mini croissant sandwiches of smoked salmon or chicken salad, mini pandesal stuffed with chicken adobo or grilled kesong puti, lemongrass chicken, brochette of beef lamb ball with potato and ensaimada balls with ube halaya, to name some. A frequent caterer to Malacañang, Sincioco shares with us some of the favorite food of each president that she has served through the years. “Tita Cory loved spinach mushroom soufflé,” said Sincioco in a text message to this writer. “FVR, pan-fried Chilean seabass. Estrada, roast beef. GMA, chocolate durian souffle. PNoy, US black angus bistek. Digong, pan-fried Chilean seabass. The Plaza has played host to foreign heads of state, such as Pope Paul VI, US Presidents Lyndon B. Johnson and George H.W. Bush, Indian Prime Minister Indira Gandhi and Premier Li Hsien Yen of the People’s Republic of China. They also shared their version of the presidents’ favorites. “Marcos Sr., fish and Ilocano food. He had his own cook preparing his meals,” said Karla. “Imelda, steaks and she’s a very good cook. Erap, lechon and our boiled Angus corned beef and baked ham. GMA and husband Mike, The Plaza ham. PNoy, barbecue and angus tapa.” She added: “For Duterte, we didn’t get to serve him up close and personal. Marawi City is that one dreamy place that proves the Philippines has more to offer than meets the eye. Prior to the pandemic, these were the lone attractions drawing visitors to the capital of Lanao del Sur. For those desiring a tourist experience, a mere half-day in Marawi gave you everything you needed. Times have changed, however. During a recent return to my beloved hometown, I found myself pleasantly taken aback by the exquisite accommodations I was provided at the newly established Ridge Hotel. This modern marvel boasts an array of state-of-the-art indulgences, a culinary haven curated by a gifted chef, a reliable and uninterrupted WiFi connection, elegant function rooms and staff composed entirely of graduates in the fields of tourism and hotel management, epitomizing maximum professionalism. My invitation to the momentous launch of the month-long celebration commemorating the 64th founding anniversary of Lanao del Sur, extended personally by the honorable Governor Datu Mamintal “Bombit” Alonto Adiong Jr., a longstanding friend, and his son, Vice Governor Mujam Adiong, granted me a very endearing visit. The distinguished presence of Indonesian Ambassador Agus Widjojo as a special guest at the event further strengthened the shared kinship between the Philippines and Indonesia. Ambassador Widjojo noted that he felt a profound sense of belonging in the Philippines, given the shared commitment to the faith in Allah prevalent in the Muslim provinces of both nations. The place shows Marawi’s ability to reinvent itself, seamlessly integrating current trends with the preservation of its rich cultural heritage. A common sight along Heaven Road is that of baristas in their taqiyah, or men’s prayer caps, and servers adorned in hijabs, the traditional headscarves worn by women. In fact, Heaven Road has become an irresistible muse for countless vloggers, who capture spectacular vistas of the surrounding landscape. On sun-drenched days, the ethereal clouds nearly graze the towering mountains, while after rainfall, a mystical mist envelops the terrain, thus explaining its moniker, Heaven Road. Aptly referred to as the “Baguio of Mindanao,” this sanctuary is well-known for its delicate climate and awe-inspiring sights of verdant forests, visible through the coffee shop windows. Earlier this year, the renowned Cebu-based chain, Bo’s Coffee, inaugurated its grandest Philippine outlet, sprawling across 1,000 square meters at Heaven Road. Observing the burgeoning prosperity and urbanity prevalent throughout the city filled me with an overwhelming sense of pride. Once accustomed to witnessing influential families accompanied by their entourage of armed enforcers, I was pleasantly surprised to encounter neatly attired security guards, and their radiant smiles as they graciously opened doors. Marawi City, now blossoming into a haven incorporating every aspect that tourists seek, effortlessly negates the need to venture into neighboring cities. Entrepreneurs, driven by an unwavering faith in Marawi City’s resurgence, continue to establish small businesses, actively extending employment opportunities to their less-fortunate kin. Young individuals, armed with a quality education, now opt to remain in Marawi, actively participating in the monumental task of rebuilding the economy. Likewise, healthcare professionals, driven by an unwavering commitment to serve their homeland, have chosen to dedicate their skills within the city’s borders, rather than seeking greener pastures abroad. Going back to Tamparan During my journey, a valuable opportunity presented itself to reconnect with friends spanning different generations. Curiosity led me to venture into Tamparan, the sole Islamic municipality, merely a brief 30-minute ride from Marawi. To my awe, Tamparan revealed itself as a dynamic community, embellished with an impressive line of 40 mosques and inhabited by residents sporting their Islamic attire. The determined strength of their faith was palpable. I had the privilege of conducting an interview and was assured by one of the locals that exploring Tamparan is a safe endeavor, owing to the commendable leadership of Mayor Juhar Dimaporo Disomimba. Tamparan envisions itself as the agro-ecotourism and commercial center of Lanao del Sur. It aims to cultivate a community of God-loving and empowered citizens who thrive in a peaceful, resilient, safe and ecologically-balanced environment. This vision is supported by a progressive and transparent governance system that fosters growth and development. Pope returns to work after taking day off with fever
Pope Francis returned to work Saturday after taking a day off with a fever, the Vatican said, with the pontiff set to hold several private audiences. The 86-year-old, who was hospitalized with bronchitis nearly two months ago, had a full calendar of meetings lined up, it said. On Friday Vatican spokesman Matteo Bruni had said the Argentine pope was not holding audiences "due to a feverish state". It was unclear who the pope had been expected to meet with, as his agenda was not made public. Vatican Secretary of State Pietro Parolin blamed the pontiff's busy schedule, saying he was "tired". Francis had eight meetings Thursday, according to his published schedule. His next public appearance is Sunday's mass at St Peter's Basilica to celebrate Pentecost, followed by the traditional Regina Coeli prayer. On Monday, he is scheduled to meet with Italian President Sergio Mattarella. Francis, leader of the world's 1.3 billion Catholics since 2013, has suffered increasing health issues over the past year, from persistent pain in his right knee to his recent hospital stay for bronchitis. The episodes have sparked widespread concern and fuelled speculation that he might choose to retire rather than stay in the job for life, a choice made by his predecessor, Benedict XVI. In late March, Francis was admitted to a hospital in Rome after having breathing difficulties and stayed for three nights. He was treated with antibiotics for bronchitis. Cruz-Behag, Baron recall De Jesus words of wisdom
De La Salle University head coach Ramil de Jesus is the type of coach who won’t mince his words when addressing his team. If he wants to get his message across he’ll tell it straightforward. No sugarcoating. While some may take it against the mentor, his Lady Spikers understand that it is just how De Jesus wants his players to learn. It is his way of motivating them to be better. Cha Cruz-Behag and Majoy Baron shared on The Collective, how De Jesus’ ‘choice’ words fueled their desire to step up and bring honor to DLSU back in their playing days in the UAAP. Cruz-Behag recalled how she was challenged by De Jesus. “Back in Season 68 that was my rookie year. When we finally won that Game 3, nag-champion na kami, we were celebrating. Ang saya-saya. Nakaka-proud,” said Cruz-Behag, who still plays for De Jesus with F2 Logistics in the Philippine Superliga. But the mentor put Cruz-Behag in her place. “After some time we went back to training. Coach came in and he talked to us rookies and sinabi niya sa amin na kaming mga bata wala kaming karapatan to celebrate and wala kaming karapatan na umastang champion,” Cruz-Behag said. “Kasi langaw lang kami sa likod ng kalabaw.” It stuck in her head. “Para sa akin ang lalim ng dating kasi nga naman ‘di naman talaga kami ‘yung nagtrabaho to earn that championship. It was really our seniors who worked hard for it,” she said. “I took it as a challenge. Gusto ko dumating naman ang panahon na we’re gonna win out own championship. I want to feel that we earned it and we truly deserved it. So di na niya kami tatawaging langaw and magiging promoted na kami to kalabaw,” Cruz-Behag added. Unfortunately, Cruz-Behag had to wait another three years before earning her stripes as DLSU was suspended in Season 69 (2006-07) while she skipped Season 70 (2007-08). Cruz-Behag won her first title in her return in Season 71, won a silver the following year before leading DLSU to back-to-back titles in Seasons 73 and 74 where she was named Finals MVP both times. Meanwhile, Baron was the Lady Spikers’ team captain when De Jesus called their performance as ‘pambarangay’ following a humiliating loss to Adamson in Season 80. “As a captain ina-accept ko na ang pangit talaga ng laro namin that time. Sobrang unacceptable talaga ng loss na yun against Adamson,” said Baron. De Jesus’ statement became a trending topic and drew mixed reactions from volleyball fans. “Medyo na-bash din si coach nun,” recalled Baron. “But for us players we get Coach Ramil eh.” The Lady Spikers understood what De Jesus wanted them to understand. They responded by winning 11 straight wins including a sweep in the Finals to complete the Taft-based squad’s third three-peat and 11th overall crown. As for Baron, she won the Season MVP honors capping off her collegiate career on a high note. De Jesus is quick to call-out the mistakes of his wards, that’s his style.
