Ninong Ry on giving A twist to popular dishes: Preference over authenticity
At the recent launch of Ninong Ry (real name: Ryan Reyes) as the first-ever celebrity endorser of the food seasoning brand Knorr Professional, the chef and YouTuber showcased his culinary skills and sense of humor that have endeared him to his over two million online followers. He gave an interactive cooking demo on how he puts his own twist to the universal favorite food, fried chicken, and the Pinoy specialty dish, sisig, using the brand’s liquid seasoning and chicken powder. While doing his tasks, he also dispensed some tips and answered a few questions from media representatives and other guests from the foodservice sector. For the fried chicken, Ninong Ry used the brining process of soaking proteins in a solution of salty water and spices overnight to infuse flavor and tenderize the meat. He then deep fried the already prepared chicken parts to golden brown perfection. To the question about using an air fryer instead, he replied, “Puwede naman, although kailangan mo s’yang i-turn. Kailangan mo s’yang i-thermometer talaga (It’s possible, but you need to turn the meat over. You need to use a thermometer.) Meaning, you have to be mindful of uneven cooking. “Ultimately in the end, mas matrabaho pa s’ya at mas magastos pa s’ya sa deep fryer (It takes more effort and money).” In making his own version of sisig, Ninong Ry incorporated his current fascination on curing and smoking meat to come up with a type of bacon. He confessed being inspired by the Three-Way Sisig of JP Anglo, the chef and owner of Sarsa restaurant. “Technically Knorr seasoning is a flavorful liquid na meron kang asin (there’s already salt),” he pointed out. “Dadagdagan ko na lang ng curing salt. Dadagdagan ko lang ng asukal para sweet cured. Kasi ’yun naman ang gusto natin sa bacon (I’ll just add curing salt. I’ll just add sugar to make it sweet. That’s what we like in bacon.).” He then showed the cured meat, which he had already smoked for four hours, and cut into sisig-sized pieces. “Ang tingin ko sa sisig (I look at sisig as), salad,” he quipped. construction n’ya ay parang salad. Ang ingredients and’yan na, just mix them all together. (Because the construction is like in salad. The ingredients are all there.) It’s the salad that I want. “Kung salad s’ya, dapat ang tingin natin, madali lang gawin. Hindi s’ya magtrabaho, pang-restaurant lang. Kung kaya n’yong gumawa ng salad sa bahay, kaya n’yo gumawa ng sisig (If it’s salad, we have to see it something easy to do. It’s not labor-intensive, just for restaurants to do. (What we’ll not force it) For me, preference over authenticity.” Here’s another piece of advice for aspiring chefs: “Huwag tayong balat-sibuyas. (Don’t be onion-skinned) Minsan, pag di nagustuhan ang luto natin (Sometimes when our dish is not liked), we take offense. Kasi parang ang sakit-sakit no’n. (Because sit seems hurtful.) But it’s nothing personal. Talagang kailangan mo lang tigasan ang mukha mo minsan (Sometimes you just have to be thick-skinned).” He then shared a realization that has helped him deal with online bashing: “Nagtrabaho kasi ako sa isang (I worked in a) restaurant before moving to social media. So nakita ko ang parallel do’n, e. (I saw the parallelism). Pag may kumain sa restaurant n’yo at hindi nagustuhan ang pagkain, susuntukin mo ba? (If a diner didn’t like the food, will you punch him?) Hindi naman, e. (Not really.) Tatanggapin mo ang sinabi n’ya (You’ll accept what they said), but at the same time, tatanggapin mo pa rin ang pera n’ya (You’ll still accept their payment.) ANAHEIM (AFP) — Donald Trump received a rapturous welcome at California’s Republican Party Convention on Friday (Saturday in Manila), mocking party rivals and dishing out red meat for an adoring audience in this Democratic stronghold. The former reality TV star, who holds a commanding poll lead in the race to become the 2024 Republican presidential candidate, called rival Chris Christie a “loser” and claimed credit for Florida Governor Ron DeSantis’s electoral victories. “I’m the one that turned Florida red, not him,” the 77-year-old told party members in Anaheim, days after he skipped the Republican presidential debate in nearby Simi Valley. “Without me, he was dead,” Trump said, a reference to the endorsement he gave DeSantis before he was swept to the governor’s mansion in 2018. The 19th Asian Games have yet to start, but Gilas Pilipinas is already winning the hearts and minds of Filipinos. Gilas coach Tim Cone swept local fans off their feet when he allowed them to watch their joint training session with the Gilas Women team last Thursday at the PhilSports Arena. After their workout, San Miguel Corporation director Alfrancis Chua gave the fans five minutes to have their pictures taken with their basketball idols. But when Cone approached Chua, he suddenly changed his mind and increased the allotted time to 15 minutes. Seeing Gilas — a collection of the country’s most popular and wealthiest athletes — go out of their way to mingle with fans is truly heartwarming. And it won’t be the last time they will see their basketball heroes as Cone has invited them anew to watch their friendly match against Changwon LG Sakers on Friday. But just a few weeks ago, this beautiful bond between Gilas and their fans was unthinkable. Gilas struggled to gain public support during the country’s hosting of the FIBA Basketball World Cup. At the same time, their head coach, Chot Reyes, was being bashed and heckled mercilessly due to their forgettable performance. Fans questioned Reyes’s integrity as a coach, especially when he benched Kai Sotto in their first game against the Dominican Republic. He was also criticized for relying too much on National Basketball Association star Jordan Clarkson, raising speculations that he was unprepared for the world’s biggest and most prestigious basketball event. The fans inside the Smart Araneta Coliseum made their presence felt. They booed Reyes during the player introductions against Italy, prompting some of his players, like Kiefer Ravena, Rhenz Abando and Clarkson, to rush to his defense. Even Reyes’s outfit didn’t escape the eyes of the public. Social media exploded with insults, adverse reactions, and comments after Reyes flaunted an ultra-expensive Thom Browne suit during their game against Angola. The money he spent, reportedly around P200,000, wasn’t worth it as Gilas suffered a 70-80 loss to the Angolans, dealing a major blow to their chances of advancing to the knockout stages. But his manner of coaching and posh outfit were not the only reasons Reyes struggled to deodorize his public image. When Gilas was preparing for the World Cup, Reyes shut the doors of their practice facility to fans and sportswriters. Instead of making the team available, the Samahang Basketbol ng Pilipinas assigned a media liaison who disseminated information and narrated what was happening through short videos and photos regularly posted on social media. That was the practice when Gilas trained at the Inspire Sports Academy in Calamba, as well as when they were in Estonia and Lithuania. Gilas also played friendly matches against Ivory Coast, Mexico, and Montenegro at the PhilSports Arena with no one but a very few team staffers and federation officials in attendance. With the friendly matches being inaccessible, sportswriters had to resort to checking the social media pages of Gilas’s opponents and the SBP to get information and avoid the wrath of their editors. They jokingly called it “socmed journalism.” That’s why the appointment of Cone as Gilas’ head coach is a breath of fresh air. The 65-year-old Cone may be an American, but he knows the importance of gaining public approval. In fact, he started his career as a villain in the eyes of the masses after engaging with the charismatic Robert Jaworski in numerous coaching battles. But he let his coaching do the talking as he led Alaska to a grand slam in 1996 before winning another triple crown with San Mig Coffee in 2014. At Barangay Ginebra San Miguel, the most popular professional team in the country, Cone further cemented his reputation as a well-loved, well-respected coach when he turned the likes of LA Tenorio, Japeth Aguilar, Scottie Thompson and Justin Brownlee into fan favorites. Basketball-crazy Filipinos are up in arms, bashing Chot Reyes following Gilas Pilipinas’ disastrous performance in the FIBA Basketball World Cup. Well, they have a point. As head coach, Reyes was supposed to carry out the special mission of leading Gilas Pilipinas to a respectable performance in the World Cup and an outright berth in the 2024 Summer Olympics. He was given everything he needed. In fact, the Samahang Basketbol ng Pilipinas opened its wallet to fly in National Basketball Association superstar Jordan Clarkson and Kai Sotto from the United States, while the best Filipino players inside and outside the Philippine Basketball Association were enlisted to assemble the country’s tallest and most talented roster ever. When Gilas Pilipinas was about to take on the Dominican Republic in the World Cup opener, the government even declared a holiday in Metro Manila and Bulacan so fans could troop to the Philippine Arena to express their support. But what happened? Gilas opened its campaign with a disappointing loss to the Dominicans before displaying subpar performances against Angola and Italy to get relegated to the classification phase. Against South Sudan, a country that only gained its independence in 2011, Gilas Pilipinas was sluggish as it trailed by 18 points at halftime. Although the Filipinos showed some flashes of brilliance in the third period, the South Sudanese proved they were the better team as they delivered a strong finishing kick to seal their victory. The loss to South Sudan sparked an outrage among Filipino fans. They claim that Reyes is no longer the right leader for Gilas as he got outclassed and outcoached by the most brilliant minds in international basketball. At one point, South Sudan coach Royal Ivey made Reyes look like an amateur as he made some key adjustments while calmly instructing his wards not to panic amid the Filipinos’ fiery rally. Prior to the game against the Africans, Reyes texted his principal — SBP chairman emeritus Manny Pangilinan — a short but sincere message: Sorry Boss. The following day, Reyes confirmed his message and took full responsibility for what is arguably one of the darkest and most embarrassing chapters in the history of Philippine basketball. Truly, it’s time for Reyes to go. But is he the only person who deserves all the blame for this humiliating performance? Definitely not. The fate of Gilas had been cemented long before they battled the powerhouse Dominicans that fateful Friday evening in Bulacan. If we really want to trace what went wrong in the Gilas program, we have to go back to as far as last year when Kiwi-American mentor Tab Baldwin suddenly resigned as head coach so he could focus on handling the basketball program of Ateneo de Manila University. With no head coach and most of the players campaigning in either Japan or Korea, the SBP pressed the panic button and instructed Reyes to hop from TNT Tropang Giga back to Gilas so he could save the program that was already teetering on the brink of a massive disaster. The results were far from impressive as Gilas blew hot and cold in the FIBA World Cup Asian Qualifiers and finished ninth in the FIBA Asia Cup. The most shameful performance, however, was in the 31st Southeast Asian Games in Hanoi when a rag-tag Gilas crew suffered a gut-wrenching 85-81 setback to Indonesia in the gold medal match, prompting Reyes to tender his resignation the moment he landed in Manila. But the federation rejected it. Pangilinan and Panlilio wanted Reyes to stay until the FIBA World Cup and finish the job that was initially intended for Baldwin. It’s been a special week for Filipina athletes. The Blu Girls made a strong run in the XVII Women’s Softball World Cup while the Filipinas posted a historic triumph in the FIFA Women’s World Cup. Oft-ignored in a country that is crazy over basketball, boxing, and volleyball, the Filipina clouters opened their campaign with three straight losses to Canada, Japan and Venezuela before finally winning over New Zealand and Italy to gain a slight chance of barging into the final round. But in a battle of survival, the Blu Girls fell short. The scores were tied at 5 in the fourth inning when Italy surged again by sending Alessandra Rotondo home. The Blu Girls tried to launch a final attempt to retake the lead but Cristy Joy Roa was struck out by the airtight Italian defense. The Blu Girls missed a chance to vie in the finals next year as they ended their campaign in fourth place with a 2-4 win-loss card. Still, it was a solid performance considering the high level of competition at this prestigious event held at the Campo Comunale da Softball in Castions di Strada, Italy. Around 18,000 kilometers from Italy, the Filipinas were making the country proud in the FIFA Women’s World Cup. Sarina Bolden, a 27-year-old daughter of an American father and a Filipino mother from California, soared high to connect a header right into the heart of the Kiwi defense that served as the country’s first-ever goal in the World Cup. Then, another Filipino-American in Olivia McDaniel repeatedly extinguished numerous Kiwi attacks to preserve the victory that shook the entire football world to its very foundation. Although international media had put an asterisk on the victory for having all but one foreign-born player in the 24-woman roster, the fact remains that they wouldn’t be donning the national colors in the biggest, grandest stage of football in the world if they were not emotionally attached to their homeland. Bolden put it nicely. Being part of the Filipinas is their only way to reconnect with their roots. It is their way to pay homage to their Filipino ancestors who molded them into what they are right now. The success of the women should serve as a challenge to the men. Gilas Pilipinas is also competing in a world-class event — the FIBA Basketball World Cup. But it is facing the huge challenge of forming a solid team with barely a month before the prestigious 32-nation event kicks off on 25 August. Injuries have hampered the formation of the Gilas squad. Gilas coach Chot Reyes had yet to set up the team when Carl Tamayo withdrew, saying that he needed to rest following a grueling campaign in Japan. Then, the injury bug hounded the team with RR Pogoy, Ray Parks and Calvin Oftana all failing to join the first training camp at Inspire Sports Academy in Laguna due to various ailments. Gilas left for Europe with an incomplete roster. But before they could go home, Scottie Thompson crashed with a finger injury, raising fears that he would no longer be available for the biggest basketball showpiece in the world. Worse, Gilas’s biggest marquee players — Jordan Clarkson and Kai Sotto — have yet to see a single minute of playing time with their Gilas teammates. Clarkson was supposed to arrive six weeks before the World Cup. But his negotiations with the Samahang Basketbol ng Pilipinas stalled until he finally agreed to show up on 6 August, barely three weeks before the competition. Sotto, for his part, has a different story. After joining the National Basketball Association Summer League, the 7-foot-3 slotman flew to Manila, not to join Gilas, but to rest and recover from the back injury that he suffered in the United States. It took a week before he finally signed with Gilas, but there’s still no clarity as to when he will formally join the training. As of Saturday, Sotto, idolized by millions of Filipinos for being their brightest hope to represent them in the NBA, has yet to see a single second on the floor with the national team. With the way things are going, it seems that the country’s hosting of the World Cup is a disaster waiting to happen. The best players in the world are all set to compete but the Filipino “superstars” appear to be finding a lot of excuses to shun the huge responsibility of representing the country. Gilas should be inspired by the feats of the Blu Girls and the Filipinas. In a nation where softball and football fans are in the minority, these wonder women overcame great adversities and made great sacrifices just to play their hearts out and bring pride and glory to the country. Never mind if they can’t speak fluent Filipino or are being bashed for being the “Team B” of the United States. The mere fact that they are playing in a world-class event with the Philippine flag on their chests without conditions, without excuses is already a testament to their patriotism and burning desire to make the country proud. Twists, turns and thrills: Astounding premieres mark ABS-CBN, TV5’s new collab
The respective premiere episodes of ABS-CBN and TV5’s new collaborative serials ‘Pira-Pirasong Paraiso’ and ‘Nag-aapoy na Damdamin’ are so fast-paced and thrilling that it makes us wonder if the creative teams of each narrative wouldn’t run out of credible twists and turns to sustain the viewers’ interest for an entire season of airing (a season on Philippine TV is 13 weeks). We were astounded by both premiere episodes. In ‘Pira-Pirasong Paraiso’, young stars Loisa Andalio, Elisse Joson and Marcus Paterson play a team of akyat-bahay thieves secretly run by a cop (Epi Quizon) who is their foster father. Beth (Andalio) acts as the lookout who pretends she isn’t part of the team. Paterson is appropriately nicknamed “Kano” for his Caucasian looks, and he is typically nervous with every heist they pull off. Andalio’s character assumes many names so they can do various money-earning crimes. In one of those, she pretends to be Baby, the long-lost sister of a rich woman named Diana (Charlie Dizon). Comebacking actor Sunshine Dizon (not a blood kin of Charlie) plays their more considerate foster mother who at one point pretends to hate them so they would all run away from her cunning husband who seems determined to wreck their young lives. Other characters introduced in the maiden episode are those of Ronnie Alonte and Raul Argel as rookie cops who clash with Quizon’s older cop. Art Acuña portrays the understanding husband of Diana in her search for her long-lost sisters. Not introduced yet is the character portrayed by Snooky Serna, who will play a special role. The journalist character of young star Alexa Ilacad revealed at the media huddle has yet to be introduced, too, along with that of her real-life boyfriend KD Estrada who plays her suitor and and whom she would cajole into joining her in pursuing the story of Diana’s lost sisters. Actor Joseph Marco, who is listed in press releases as a cast member, did not appear in the kick-off episode. Pira-pirasong Paraiso is jointly directed by Raymond Ocampo and Rodel Lindayag. Extreme hatred, vengeance Meanwhile, extreme hatred and vengeance are the engrossing themes of Nag-aapoy na Damdamin.’They are fierce and fiery emotions a doctor and a lawyer have for each other due to the death of their respective fathers. Tony Labrusca plays the lawyer Lucas, while JC De Vera plays the doctor Philip. The first episode of Nag-aapoy introduced the character of Jane Oneiza as Lucas’ devoted wife. Former action star Joko Diaz is also in the cast, along with Ria Atayde, Maila Gumila and Aya Fernandez. Nag-aapoy na Damdamin is jointly directed by FM Reyes and Benedict Migue. Both shows will premiere on 25 July and they are meant to take Pinoy viewers away from their afternoon naps, as they show at 3 p.m., Monday to Friday, on A2Z network, TV5 and all the streaming apps of ABS-CBN and TV5. The airing begins with Pira-pirasong Paraiso, followed immediately by Nag-aapoy na Damdamin. Well, serene narratives about life somewhere in this country would not be good enough to keep us awake in the afternoons of our lives. Also, serene stories can’t bring Philippine television to a paradise of high revenues. So, do watch the unnerving twin shows Pira-pirasong Paraiso and Nag-aapoy na Damdamin. It is therefore incumbent for all of us to make the effort to practice certain rules and protocols which can mitigate and prevent relationships into becoming a permanent loss. Listening with respect and an open mind is a positive ice-breaker that fosters trust, goodwill and friendship. This act of listening intently communicates to the other party that you are interested to know their thoughts and this makes them feel valued and respected. Giving credit where credit is due allows for a win-win situation between the person being honored and the honor giver. Putting a closure to every argument and quarrel allows both parties to walk away feeling peaceful and confident knowing that the closure allows the respect and the trust to remain. Practicing the golden rule of doing to others what we want others to do unto us is the most powerful tool we can use daily to ensure that our personal and professional relationships are smooth and working well. Working on my books is a good example. Crucial to book writing are the interviews conducted. I have come to realize that many interviewees are nervous to share their stories because their information are mirrors of who they are — their beliefs and principles in life. What I do when I first meet them is smile and extend my hand for a handshake and this act of respect actually sets the mood right and they feel at home and relaxed. So, the interview becomes seamless and flowing. Listening is an art and I have mastered this act, so much so, that persons I interview become so engaged in their responses which is critical to book content. In the case of my book team, I always endeavor to give them a full picture of the book’s objective and I clearly define each member’s responsibility. This method of open communication always works well because each team member feels important as I give them that cognizance that their individual inputs and expertise are integral to the success of the book. I must admit that having produced 45 notable coffee table books in the last 25 years has given me the vast experience of dealing with different kinds of persons. As such I treat each one as an important member of my Seagull family and, to date, I have maintained my friendship with everyone even if many of them have pursued their own careers. Janno Gibbs evidently had fun using the latest viral craze on TikTok, as he posted his age filter video that made him look like his father, the esteemed actor Ronaldo Valdez. "Janno - Ronaldo #tiktokfilters", he wrote in the caption. The actor was even more elated when GMA News featured his video and how it "transformed him into a perfect copy of his dad Ronaldo Valdez!" Gibbs' video would itself become viral, hitting 7 million views. But along with it came the requisite bashing from some netizens, who said Gibbs was in effect an inferior copy of his dad. ("His dad is more handsome. Sorry," said one commenter.) Only because my barber — not Kuwatog, mind you — would not stop talking about it between snips here and there — I got an earful on a burning issue of the day. That the raging debate escaped someone supposedly with a nose for news betrayed the arena where people have been bashing one another over it. Where else, but on social media. If only to ensure that he was wide awake as he gingerly passed the razor over my nape and sideburns (sideburns, really?), I interjected as needed to break his monologue. Such is the lesson every man should learn early in life, aside from how to spit-shine his shoes. Yes, a man is judged by the state of his footwear — and measured too by his shoe size. LOL. A baseless correlation, right, Kuwatog? But back to the lesson. That lesson is that if there’s one person a man should be able to trust, it’s none other than his barber. In his hands, a man could rest assured of catching some shut-eye and still getting up from the chair. Sweeney Todd, I am going nowhere near your bloody shop. Neither am I going to stick my neck out for you nor your delectation. My barber talked — no, make that pontificated — on how wrong it was for Mimiyawn (or Mumu-yun or Mamasan, or whatever) to say that one should not date someone who had no money, lest she end up dirt poor for life, trapped with a loser. I didn’t know the context of that influencer’s gab, and I was just too sleepy or lazy, or both, to pass judgment either way — pro or against. But surmise I did that the one being admonished was poor too. For if you’re rich and you swim outside your gilded “haves” pond, you being a pricey or prized Lapu-lapu taking a chance with a have-not “tilapia” might just have a happy ending, after all. Think of it like Mozart’s Twinkle, Twinkle Little Star: They may run through a gamut of variations, but whether the rudimentary first, the jazzy fifth, or the nearly macabre sixth, they all, nonetheless, sizzle and sparkle. Love the Philippines!
The so-called tourism fiasco emanating from the ad agency DDB Philippines’ booboo on its audio-visual presentation to promote the slogan “Love the Philippines”, is being blown into exaggerated if not laughable proportions. One lawmaker wants to discard the slogan because the controversy allegedly created a “negative impact” and “The DoT’s enhanced campaign has lost the “persuasion game, its redeeming value and has become unsalvageable.” Such declaration lacks depth in understanding the reality and short lifetime of news. While it may have reached some or many parts of the world because of the wonders of electronic media, it is highly doubtful if the same received a negative reaction that would impact the tourism programs of the DoT. For one, the video ad does not show appropriate world-renowned tourist attractions like ours, rather they are mere look-alike of the originals that really exist. The truth of the matter is that even this writer did not notice — as others would have not known the inauthenticity of those depictions — until it was pointed out. They really look like the real McCoy which we are used to seeing. For another, breaking news on the international scene vis-a-vis the Russia-Ukraine war, the current hostilities between superpowers, and other earth-shaking events come in succession that will get the world’s attention and certainly not the lazy work done by an ad agency in the Philippines. It’s the height of naïveté to think that people of the world will spend precious time on an insignificant flaw committed by an advertising firm and uselessly dwell on it. It’s not as if the advertisement pictures the country as a dangerous territory or an unattractively dreary place. While the subject video showed illustrated graphics of other countries, they however do not destructively depart from the original, which by themselves are attractive and eye-catching. The incident could even be a blessing in disguise as it may interest those who have not heard of the Philippines or who have yet to visit it, make research it, and in the process discovers the magnificent and splendid sights that our country has to offer and prod them to come over. There is another self-projecting suggestion for a congressional investigation on the matter. What is there to investigate? There has been an admission of fault. DDB Philippines owned the wrongful act, and the DoT Secretary immediately acted on the blunder and presently rectifying it. As this writer articulated in the immediately preceding column, this bloated brouhaha cannot diminish the grandiose plans and well thought projects crafted by Secretary Cristina Garcia-Frasco intended to greatly enhance the tourism industry and generate titillating interest in foreigners to saturate our country with their visits. So far the number of tourists has increased in numbers. With the DoT’s well-laid-out plans to give our best to them, it will not be surprising if we surpass the pre-pandemic number of tourist arrivals in the coming months. As to the incorrigible destructive critics who keep on bashing Secretary Cristina, this writer suggests they move forward for the latter has already swiftly and decisively rescinded the contract with DDB, and most likely will be sued for breach and damages. Moreover, the error can easily be remedied by doing another audio visual that will showcase the wondrous reasons why all globetrotting nationals of all races will — and why we — love the Philippines.
