Mooncake ice cream, anyone?
Mooncakes are a traditional Chinese delicacy that are enjoyed and given as a gift to friends, colleagues, family, relatives and clients during the Mid-Autumn Festival, which is now better known as the Mooncake Festival. The date changes every year because it follows the Lunar calendar. Highlight of the festival takes place on 29 September this year, but the celebration is actually longer than that. There are so many different kinds of mooncakes these days — from the traditional lotus paste to the more contemporary beans, nuts and custards, even meats. And the ultimate indulgence, the egg yolk, can be just one or as many as four or six. Shapes, too, shift from square to round, and sizes range from small, almost bite-sized, to big and for-sharing. [caption id="attachment_189648" align="aligncenter" width="525"] PHOTOGRAPHS COURTESY OF KARABELLA DAIRYSalted Egg Caramel Ube Mooncake Gelato.[/caption] But there is one form of mooncake that you have probably never tried. I have also never tried it until recently, because it is an entirely new “phenomenon” mooncake in ice cream form. Mooncake gelato. With lots of chunky mooncake bits to chew on. Yes. After successful collaborations to produce cakes and alcoholic drinks in ice cream, Karabella Dairy recently joined hands with chef Nathaniel Uy of TheHungryChef to create two flavors of mooncake gelato. Chef Nathaniel is, after all, known for his homemade, artisanal mooncakes, which he produces and sells during mooncake season. He makes exquisite flavors, including black bean mooncake, ube mooncake and coffee mooncake. [caption id="attachment_189649" align="aligncenter" width="525"] Matcha Red Bean Mooncake Gelato.[/caption] “It is really a tradition to give mooncakes during the Mid-Autumn Festival, and we wanted to be able to give mooncakes that are different but still delightful this year. We collaborated with Chef Nathaniel because we find his mooncakes very different from the ones we tried, especially the crust. The fillings are also ‘sakto to panlasang Pinoy’ and very creative, too,” said Jan Buenaflor of Karabella Dairy. Karabella already had the gelato base flavor, the brand’s best-selling Salted Egg Caramel Gelato for the Salted Egg Caramel Ube Mooncake Gelato, one of the two flavors that came out of the collaboration. Then Ericjan “EJ” Buenaflor, the gelato master of Karabella, created a new matcha base for the other flavor, Matcha Red Bean Mooncake Gelato. [caption id="attachment_189647" align="aligncenter" width="525"] Photograph courtesy of Jan and EJ Buenaflojan and EJ Buenaflor, the mother-and-son team behind Karabella Dairy, with chef Nathaniel Uy of TheHungryChef.[/caption] “We considered what flavors we could make to precisely combine with Chef Nat’s mooncakes. We first ran and tried a tiny batch to see if our salted egg and matcha would complement his mooncakes. We made several batches and tests to balance all the flavors, as we didn’t want to overpower the real flavor of Chef Nat’s mooncakes and we also didn’t want to come up with a mooncake gelato that will seem as if we just topped our gelato with mooncake,” explains EJ. The results: The salted egg in the first Mooncake Gelato flavor has its saltiness balanced by the sweetness of the caramel and the ube, so that the ingredients complement each other. The matcha in the second flavor provides a distinct and refreshing green tea flavor while the red bean paste adds a unique sweetness and textural contrast to it to make a great combo. Karabella x TheHungryChef’s mooncake gelatos are now available online. They are available in a package of one-pint Salted Egg Caramel Ube Mooncake Gelato, one pint Matcha Red Bean Mooncake Gelato, and two TheHungryChef mooncakes for P1,500. You can also buy the mooncake gelatos per pint or flavor. The post Mooncake ice cream, anyone? appeared first on Daily Tribune......»»

WHO seeks China access for Covid origin probe
The head of the World Health Organization has asked China to provide information on the origin of Covid-19 and allow its experts full access to investigate the source of the coronavirus. Tedros Adhanom Ghebreyesus told the Financial Times he is awaiting the response of Beijing to WHO’s letter requesting for “full access” and information. The WHO wants to determine with certainty the origins of the Covid pandemic. There are currently two theories about the origin of the Covid-19 virus. One theory says the virus escaped from a laboratory where it is being studied in Wuhan, China. The second theory says an animal with the coronavirus infected people at a local market in the same Chinese city. A team of specialists led by the WHO and accompanied by Chinese colleagues had investigated China in early 2021. In a joint report, they favored the hypothesis that the virus had been transmitted by intermediary animal from a bat to a human, possibly at a market. Tedros said after that all options remained “on the table.” Tedros has repeatedly said the WHO would not abandon its investigation and has called on Beijing for transparency in sharing data, carrying out investigations and sharing the results. The WHO lifted the highest alert level that had been in place for the pandemic earlier this year. Thanks to vaccines, post-infection immunity and better treatment, the virus is now under greater control, although with the arrival of autumn in the Northern Hemisphere, new variants are emerging. China megacities brace for super typhoon
Hong Kong, Shenzhen and other southern Chinese megacities are bracing for super typhoon “Saola” on Friday as it threatens to become the strongest storm to hit the region in decades. With the highest alert level of T10, Saola already forced the start of classes and stock trading in Hong Kong to be suspended while hundreds of flights were canceled regionwide. Hong Kong’s airport authority said more than 300 flights were canceled Friday, though 600 were still scheduled. Neighboring casino hub Macau also issued its third-highest typhoon warning by mid-afternoon. China’s national weather office said Friday that Saola was 140 kilometers east-southeast of Hong Kong with sustained winds of 210 kms per hour as of 3 p.m. Friday. Authorities warned that Saola could cause a storm surge that could lead to “serious flooding.” Neighboring Shenzhen — home to 17.7 million people — opened shelters for people to take refuge, and planned to halt public transportation. Trains in and out of Guangdong will also be suspended from 8 p.m. to 6 p.m. Saturday. Saola displaced thousands earlier this week as it passed the northern Philippines, but no direct casualties have been reported so far. Southern China is frequently hit in summer and autumn by typhoons that form in the warm oceans east of the Philippines and then travel west. Super Typhoon Saola sweeps towards southern China megacities
Tens of millions of people across southern China hunkered down Friday as Super Typhoon Saola swept toward the megacities of Hong Kong and Shenzhen, forcing the cancellations of hundreds of flights, shutting businesses, and closing schools. Packing sustained wind speeds at 210 kilometers (130 miles) per hour as it moved toward Hong Kong, Saola could be one of the most powerful typhoons to hit Guangdong if it makes landfall in the province. By 11 am (0300 GMT), it was 180 km east-southeast of Hong Kong, where the stock market canceled trading because of the T8 signal -- the city's third-highest typhoon warning level. By late morning, neighboring Shenzhen in Guangdong announced the suspension of work, businesses, and market activity from 4 p.m., while transportation will be halted in the evening. "Apart from emergency response personnel and livelihood protection personnel, people are advised not to go out," said the emergency response department of Shenzhen, a city of 17.7 million. "The city will open all shelters for the public to take refuge." Authorities had already issued the highest typhoon warning for the storm, which Chinese state media said would make landfall "in the coastal areas stretching from Huilai to Hong Kong" on Friday afternoon or evening. Across the mainland border in Hong Kong, the city's weather observatory warned that Saola could skirt within 100 kilometers south of the territory, causing a storm surge around Victoria Harbour. "There may be serious flooding," it said, adding that the eastern coastal areas could see water levels reach the heights of 2018 when Typhoon Mangkhut hit Hong Kong and injured more than 300 people. Streets were deserted as a drizzle blanketed Hong Kong Island, with wind and rain expected to pick up later. Businesses and homes around Hong Kong duct-taped glass displays and windows, while office buildings near the harbor barricaded their entrances to prevent water damage. Surfers took advantage of the high winds -- expected to reach 63 kilometers per hour -- and tackled the huge waves generated by the coming typhoon at a Hong Kong beach. Flights mostly normal A direct hit on Hong Kong is rare, but the observatory said it would "assess the need to issue higher tropical cyclone warning signals" in the evening -- with the possibility of raising the threat level to the highest "T10". Hong Kong's airport authority said the morning departing flights were "mostly normal" but from 2 pm, arriving and departing flights have "basically been canceled". "As of now, we have had 366 flights canceled and 40 flights delayed... Thanks to the support of airlines and our various service providers, we could ensure that 600 flights today operated normally," Wing Yeung, general manager of Airport Authority terminal operations, told reporters. Hong Kong's flagship airline Cathay Pacific had already canceled all flights in and out of Hong Kong between 0600 GMT Friday and 0200 GMT Saturday. Its subsidiary, budget airline HK Express, announced it was canceling 70 Friday and Saturday flights in and out of Hong Kong. Saola displaced thousands earlier this week as it passed the northern Philippines, but no direct casualties have been reported so far. Southern China is frequently hit in summer and autumn by typhoons that form in the warm oceans east of the Philippines and then travel west. While they can cause temporary disruption to cities like Hong Kong and Macau, fatalities have become much less common thanks to stronger building codes and better flood management systems. Malays in technicolor
Malaysia is a merry mix of Muslims, Indians, Chinese and Christians whose vibrant culture and traditions vitalize its calendar with a variety of celebrations and festivals that, in themselves, give every reason to visit the country. In every celebration, the tradition of holding an “open house” or “welcome all” provides the opportunity for the various races to visit each other to enliven the celebration. Muslim For Muslims, the two major festivals are celebrated namely Hari Raya Puasa (Aidilfitri) and Hari Raya Haji (Aidiladha). Hari Raya Puasa marks the end of Ramadan, which requires Muslims to fast for a month. Hari Raya Haji is celebrated on the 10th day of Zulhijjah (the month of Islam) when Muslims perform the Haj in Mecca and are in the final stages of their worship. In conjunction with the festival, Muslims who are capable are encouraged to perform sacrificial worship (ibadah korban) and, due to this, it is also known as Hari Raya Korban. Other than the two major festivals, Muslims also celebrate Maal Hijrah (Awal Muharam), which is a celebration of the Islamic New Year; Maulidur Rasul to commemorate the birth of Prophet Muhammad SAW, and Nuzul Quran to commemorate the day of the revelation of the al-Quran among Muslims. Chinese Chinese Malaysian communities celebrate Chinese New Year on the first day of the Chinese calendar in January or February each year. The festival starts with the whole family gathering for dinner. The celebration lasts for 15 days to the day of “Chap Goh Meh”, which is celebrated on the night of the 15th day of the festival. The festival gesture or goodwill package “angpow” is a tradition that enlivens the atmosphere of Chinese New Year, especially for the children. For the majority of Chinese who are Buddhist, the month of May every year marks the arrival of Wesak Day to commemorate three important events in Buddha’s life: the day of birth, the day of the achievement of maturity of thoughts and the day of death. During the celebration, ceremonies and parades are normally held with prayers. In addition, there are other celebrations, such as the mid-autumn lantern celebration (Tanglung), Month of the Ghost Festival and Qing Ming. Indian For Hindu devotees, Deepavali, or the Festival of Lights, during the month of “Aippasi,” according to the Tamil calendar (October to November) is a time to rejoice. It marks the victory, brightness overcoming darkness, goodness overcoming evil, and wisdom over ignorance. The festival begins with prayers, followed by visiting of relatives and friends. In the evening, the house will be decorated with lights to enliven the festive atmosphere. Hindu devotees also celebrate Thaipusam in January as a sign of respect to the God Muruga. During the festival, Batu Caves in Selangor will be the focus of Hindu devotees carrying presentations above the “kavadi” to be presented to the gods. In addition, Hindus also celebrate Ponggal, Hindu New Year, Navarathiri and Kharthigai. Other festivals On 25 December each year, Christians celebrate Christmas, which marks the birth of Jesus with prayers in churches and visits to their relatives and friends. In Sabah and Sarawak, there are also the traditional ethnic festivals. In Sabah, in the month of May every year, the Kadazans will celebrate the Harvest Festival (Tadau Kaamatan), an important event to the farmer groups. Tamu Besar or Pasar Tahunan is a carnival created to organize traditional sports events. For the Dayaks, Ibans and Bidayuh in Sarawak, 1 June every year is a day to be awaited because, on that day, they will celebrate Hari Gawai. For the Dayaks, they will have specific celebrations consisting of Gawai Batu (beginning of the paddy planting season), Gawai Burung (celebration associated with a bad sign or nightmare), Gawai Bersimpan (thanksgiving upon completion of harvesting), Gawai Antu (celebration for the souls of the dead) and Gawai Kenyalang. Apart from the different races and festivals, Malaysians also celebrate Labor Day on 1 May, National Day or Independence Day on 31 August, Birthday of His Majesty Yang Di-Pertuan Agong on the Saturday of the first week of June, Birthday of the King/Sultan at state level and Good Friday for various states. N. Korea reopens its borders to citizens living abroad: KCNA
North Korea has moved to further open up from strict pandemic-era isolation, with state media reporting Sunday that citizens living abroad have been allowed to reenter the country. State-run KCNA said that the State Emergency Epidemic Prevention Headquarters had announced that "citizens abroad have been allowed to return home". "Those returned will be put under proper medical observation at quarantine wards for a week," the report said. It added that the decision had been made "in reference to the eased worldwide pandemic situation." North Korea shut its borders in early 2020 in response to the coronavirus pandemic, but there have been increasing signals the country has moved towards reopening. Chinese and Russian officials attended a military parade in Pyongyang last month -- the first foreign dignitaries to visit the country in years. Last week a delegation of athletes was allowed to attend a taekwondo competition in Kazakhstan, while state-run Air Koryo made its first international commercial flight in three years. The flight arrived Tuesday morning at Beijing's Capital Airport, with AFP reporters only seeing two North Koreans -- recognizable by their distinctive badges bearing the faces of former leaders Kim Il Sung and Kim Jong Il -- come through the arrival gate. Neither spoke to media. Another Air Koryo flight bound for Pyongyang departed just after 1:00 p.m., a tracking website showed. The Seoul-based Yonhap News Agency published photos of a number of North Koreans lining up to check luggage for that flight. Asked about the flights, China's foreign ministry said that it had approved restarting commercial air travel between Beijing and Pyongyang. "During the summer and autumn flight season... the Chinese side approved flight plans for passengers such as the Pyongyang-Beijing and Beijing-Pyongyang routes of Air Koryo," foreign ministry spokesperson Wang Wenbin told a regular briefing on Monday. des/nro © Agence France-Presse The post N. Teachers in many countries, including the developed ones, are resorting to strikes to force the government to increase their wages. They complain that their current salary is no longer enough to cover the rising cost of living due to high inflation. A major teachers union in the United Kingdom plan to stage a walkout next month and July if an ongoing pay hike negotiation doesn’t conclude in their favor. Other teachers groups in the country are also planning strikes in autumn if their similar demand for salary raise is ignored. The unions were not satisfied with the 4.3 percent salary increase, which translates to £30,000 (P2 million) per academic year, offered by the government. Other teachers are switching to jobs that pay higher wages. A kindergarten teacher from Wuhan, China has resigned and became a full-time vlogger after earning so much in one of her classroom videos that went viral in Douyin, the Chinese version of TikTok. In the viral video of the teacher with the surname Huang, she is singing the Chinese nursery rhyme “Planting Flowers in the Garden” live. The video received over 100 million views, the Malaysian news outlet Oriental Daily reported. Many viewers flooded Huang with cash gifts amounting to more than her 3,000 yuan (P23,000) salary as a teacher. In the Philippines, the minimum wage of a public school teacher is P27,000. Huang’s live streaming earnings were 16 times that. Her cash earnings were also greater than American teachers’ minimum salary of $33,000 (P1.8 million) per academic year and British teachers’ pay of 30,000 pounds (P2 million) per school year. Huang herself was shocked to receive 450,000 yuan (P3.5 million) in cash gifts from viewers. “I’m so happy, I live streamed for a day and earned more than 10 years’ worth of my salary. Thank you, everyone,” Huang told her viewers, according to Oriental Daily. The post Revenue streams appeared first on Daily Tribune......»»
