New design-led heritage boutique hotel to open in Singapore
21 Carpenter, a heritage boutique hotel, is slated to open its doors before the year ends. Nestled between the vibrant nightlife of Clarke Quay and the old-world charm of Chinatown, this centrally located property is developed by conservation specialists 8M Real Estate. 21 Carpenter has been brought to life through collaborative efforts involving local and international partners, renowned for their contributions to design, art and dining. Notably, the hotel showcases the architectural expertise of the award-winning firm WOHA in restoring the historic building. The hotel also proudly holds the distinction of being a member of Design Hotels, affiliated with Marriott Bonvoy. Steeped in history and architectural significance, the 48-room development breathes a new lease of life into the former Remittance House, Chye Hua Seng Wee Kee, dating back to 1936. WOHA has seamlessly blended tradition and innovation while incorporating thoughtful design elements into the row of four heritage shophouses. “In the creation and design of 21 Carpenter, we wanted to honor the rich history of the heritage structure. Every detail has been thoughtfully crafted, with key parts of the design reflecting the historic building’s aesthetics and storied past,” says Richard Hassell, founding director of WOHA. 21 Carpenter comprises two distinct wings: The Heritage Wing, featuring 26 rooms in the conserved building, and The Urban Wing, a contemporary five-story extension with an additional 22 rooms. The generously sized rooms range from 30 to 56 square meters, allowing ample space for a comfortable stay. The property also boasts a rooftop infinity pool and lounge offering breathtaking views across the city and Marina Bay, along with a garden terrace on the third level. The hotel will feature an independent neo-bistro and bar, with Michelin-star chef Andrew Walsh at the helm as the culinary director. Located at the corner of Carpenter Street and New Bridge Road, the street-level neighborhood venue is poised to become a destination for the modern-day epicurean. The space is designed for one to linger longer and diners can expect elevated renditions of timeless classics in hearty portions. In keeping with the brand’s core pillar of sustainability, 21 Carpenter has been meticulously restored using many of the original features of the building. Crafted for the contemporary luxury traveler, the property’s interior combines heritage and modern design, featuring commissioned art by renowned local artists, carefully curated by The Artling. Amenities and in-room touches will also embrace the talents of local creators, ensuring an authentic and immersive experience for the most discerning of travelers. “As the only heritage hotel debuting in Singapore this year, 21 Carpenter is more than just a place to stay; it is a place to experience Singapore’s true history and past, while creating new stories for the future,” says Tarun Kalra, general manager of 21 Carpenter. “The team and I are excited to define hospitality through our thoughtfully considered service touches, offering guests an experience that encapsulates the very essence of our brand and its charm. During their time with us, we hope guests enjoy an immersive cultural experience that will leave a lasting impression.” Visit www.21carpenter.com.sg/. The joy of eating
There is almost always a restaurant opening in the metropolis — either to excite the taste buds or simply elevate the Filipino dining experience. Yes, from Filipino dishes to American-Italian fare and specialty steakhouse, there will always be something for everyone to discover, relish and enjoy. LOCAVORE AT ESTANCIA MALL A cozy, contemporary space ensconced inside the Estancia Mall in Pasig City, Locavore is given true Filipino touches with its warm woods, rattan chairs, rustic pendant lights and an expansive glass window that provides an exceptional view of the surrounding environs. [caption id="attachment_192645" align="aligncenter" width="771"] OLIVE Garden’s Herb Roasted Chicken.[/caption] Opened last May, Locavore at Estancia Mall is the seventh branch of the restaurant, which catapulted to prominence in the culinary arena in 2014 after it opened its first branch at Brixton Barrio Kapitolyo, also in Pasig City. It then opened at Forbestown in Taguig City, Valero Street in Makati City, S’Maison in Pasay City, Eastwood Mall in Quezon City and SM City Bacoor. With the talented chef Mikel Zaguirre and his team at the helm, Locavore takes the homey heartwarming flavors of Filipino cooking gives a more sophisticated interpretation. And with the newly opened branch comes an expanded menu and new dishes exclusively in the Estancia outlet. For starters, have the crisp BBM or Bagnet, Buro and Mustasa — a platter filled with thinly sliced, crispy pork bagnet chips that you wrap in mustasa leaves (Samgyup style) seasoned with burong (pickled) hipon and burong mangga with gochugaru (Korean chili flakes). Follow it up with Bistek Pintxos, toasted bread decked with bistek-style beef tenderloin, grilled quesong puti, truffle aioli and red onions. [caption id="attachment_192646" align="aligncenter" width="525"] OLIVE Garden’s Purple White Cocktail.[/caption] “The new dishes are presented on slate plates because they are mostly bar chows,” says Alejandro Pahan Jr., operations manager. “That’s our new concept. We were thinking of madaling kainin (easy to eat) and something fun. Because samgyup is trending, we came up with pintxos.” The resto also has Bulalo Pintxos, roasted bone marrow with pickled labanos and pares jam; Yakitori Platter, grilled skewered chicken wings, chicken thigh meat, gizzard and liver served with annatto aioli, tocino butter, miso butter and spiced suka; Bagnet Chips, housemade bagnet chips served with spiced vinegar; and Inasalitos, inasal chicken with salsa, labuyo aioli served in lumpia taco shell. All these dishes are paired with seven new signature cocktail drinks, crafted by its in-house mixologist. Pahan says the new refreshing drinks heavily relies on the food being served at the restaurant. They complement the taste of the meals. Locavore serves alcohol and spirits. The drinks include Hardin, a hybrid between gin tonic and Tom Collins, with tonic water and botanicals and floral notes like blue pea and elderflower (which has a similar taste notes of lychee), garnished with rosemary and black pepper; Kinilig, a combo of Disaronno amaretto, honey, lemon juice and rum, with rice paper art design on top; Diwata, a blend of Bombay Sapphire gin with Giffard Lychee liqueur, sugar syrup and lemon juice, dressed with basil sprig and forget me not flower; and Antibayotiko, a whiskey-based mix of bourbon, ginger liqueur, honey and lemon juice. Locavore at Estancia Mall has a seating capacity of 120 people and targets bar goers in the area. It’s open until 1 a.m. from Wednesday to Saturday. The rest of the week, it follows the mall hours. OLIVE GARDEN AT THE VERVE A visit to the newly opened third branch of Olive Garden at The Verve in BGC, Taguig City, is a journey of discovery into a world of delicious and affordable pasta, bread, salad, chicken and pizza sensibilities. The menu is broad and touches base with all the departments of classic Italian-American fare. Upon arrival, diners are swiftly delivered a basket of freshly baked breadsticks, which are widely popular in all 900 Olive Garden stores all over the world, including the Philippines. They are buttery, a bit garlicky, moist and chewy. The unlimited breadsticks, including the never-ending soups and salads, come free with every order of an entrée. What a treat! [caption id="attachment_192647" align="aligncenter" width="525"] LOCAVORE’S BBM (Bagnet, Buro, Mustasa).[/caption] The refreshing salad is a merry mix of healthy greens, tomatoes and olives with a light house dressing, while the soup selection includes Pasta E Fagioli, Zuppa Toscana, Minestrone and Chicken & Gnocchi. Olive Garden first opened at the Mall of Asia on 12 September 2022 and at Glorietta 3 in Makati City on 9 January 2023. “It is, more or less, the same menu that we have for our first branch in MOA and also the same menu all over the United States,” Rechele Tiongson, chief operating officer of The Bistro Group, the company responsible for bringing in Olive Garden which was founded in 1982 in Orlando, Florida. “We never changed anything aside from modifying some of the portions that would fit the Filipino market, but the taste and flavor are the same. We use the finest ingredients like imported cheeses.” She adds: “Just to be clear, we did not reduce the portions but we introduce the smaller ones like solo version for those will smaller appetites. The big portions remain the same.” Browsing the menu uncovers more inviting dishes, such as the signature item, Tour of Italy (a huge platter of everything good — Chicken Parmigiana, Lasagna Classico and Fettucino Alfredo pasta), Amazing Alfredos (made from scratch using imported cheeses, not just heavy cream) and an Italian classic, Shrimp Scampi. Just recently, four new dishes were introduced — Mediterranean Chicken, Chicken Tuscany, Roasted Herb Chicken and Italian Braised Short Ribs, all served with a choice of mashed potato or steamed rice. “We are happy with the response of the public to Olive Garden,” shares Tiongson. “It was extremely unexpected when we first opened in MOA. We were busy for the next six months of the restaurant. The queue was really long. People had to wait for 30 to 45 minutes, which we felt bad for our customers, but that was how they responded to the first opening of Olive Garden in the Philippines.” Olive Garden’s vibe is casual, light and bright yet it is warm and comforting with olive green accents. The design of the interiors is an allusion to the Italian countryside through earth tones and natural textures. It can accommodate 150 people. Olive Garden at The Verve in BGC is open from Monday to Thursday, 11 a.m. to 10 p.m., and Friday to Sunday, 10 a.m. to 11 p.m. [caption id="attachment_192648" align="aligncenter" width="525"] LOCAVORE’S Sizzling Sinigang.[/caption] ASTON’S SPECIALITIES AT ARCOVIA Tron Ng, Astons business development executive based in Singapore, flew to Manila last, 22 September, in time for the opening of the third branch of Astons Specialities, a Singapore-based restaurant chain renowned for serving affordable steaks and Western cuisine, at Arcovia City in Pasig City. Astons is a casual steakhouse which first opened in the Philippines last year on the 4/F of Mega Atrium in SM Megamall. The second branch was at Trinoma Mall in Quezon City early this year. Silver Lush Food Corporation brought in the Singapore brand to satisfy the cravings of steak lovers and those who enjoy more seafood, chicken, sausages, burgers and pasta dishes. “This is our third outlet in the Philippines in a span of 16 months,” says Ng. “We have been around since 2005 when it was founded by Aston Soon. We started as a very small coffeeshop in Singapore. Eventually, we managed to draw a lot of attention because we offer quality food at affordable prices.” He adds: “Within a year, we opened our own restaurant and we continue to grow and expand. We have introduced many different brands under Astons and we have over 40 restaurants only in Singapore alone.” [caption id="attachment_192649" align="aligncenter" width="525"] OLIVE Garden Pasta Twirl. (From left) Zachary Reams of Darden Int’l Learning and Development partner; Marc Buencamino, Fort Bonifacio Development Corporation operations director; RC Tiongson, The Bistro Group chief operating officer; Lourdes Reyes, FBDC chief financial officer; and Lisa Ronquillo-Along, The Bistro Group chief marketing officer.[/caption] Aside from the Philippines, Aston Specialities can also be found in Myanmar and Malaysia. It was also recognized by the AsiaOne’s People Choice Awards and Asian Enterprise Brand Awards for its service and offerings. “I believe Astons will do well in the Philippines because the locals lean more on western food,” Ng says. Of course, the piece de resistance of Astons revolves around its steaks and meat, as it should be. The different cuts of meat from prime sirloin and New York strip to prime ribeye steak do not disappoint. Each has wonderful marbling with the juiciness of the meat, coating your tongue with every bite. The perfect grill marks immediately excite one’s appetite and invite you to dig in with your own side dishes — potatoes (baked, mashed, wedges or fries), Mexican nachos (chicken or beef) or Mac & Cheese. Other items on the menu are also a treat, such as Surf & Turf and Chargrilled Salmon Fillet, Grilled Porkchops and Honey Bourbon Ribs. Cocktail drinks are also aplenty — Piña Colada, Tequila Sunrise, Daiquiri, Orange Margarita and Sangria, to name some. With its industrial chandelier, brick accents and dark wood touches, the place takes on the air of an upscale roadhouse, but softened by the muted walls and expansive glass windows. Astons Specialities at Arcovia City is open daily, from 11 a.m. to 9 p.m. All told, a trip to any of these newly opened restaurants guarantees a truly gratifying dining experience. Megaworld Lifestyle Malls, the retail and commercial arm of property giant Megaworld, is unveiling its redesigned masterplan for Northill Parade, its retail and commercial development set to rise within the 53-hectare Northill Gateway township along the Bacolod-Silay Airport Access Road. The 2.4-hectare Northill Parade is a free-standing retail development concept that features a total leasable area 1.1-hectares. Aside from retail and dining establishments, the remainder of the space will be allotted to open spaces, parking, and landscaped pathways. Northill Parade forms part of the 7.5-hectare mixed-use retail and leisure complex inside Megaworld’s Northill Gateway township. “We are excited to introduce Northill Parade as our redesigned commercial development in Northill Gateway. This free-standing commercial concept is similar to the stopovers in the United States located along highways going to and from the airport. Aside from serving guests and tourists driving along the Bacolod-Silay Airport Access Road, Northill Parade will also offer great convenience to residents of Forbes Hill, Fountain Grove, and other nearby villages,” says Graham Coates, head of Megaworld Lifestyle Malls. Among the first tenants that will soon have free-standing restaurant outlets each in Northill Parade include five first-in-Bacolod international casual dining brands from The Bistro Grou. These brands include Denny’s, TGI Friday’s Randy’s Donuts, Texas Roadhouse, and Olive Garden. This will be the first branches of Randy’s Donuts and Olive Garden outside of Metro Manila, with the upcoming Randy’s Donuts establishment also featuring a dedicated drive-thru lane. This year’s recipients included senior creative manager Angelene Coronel, healthcare worker Richie Garcia, special education teacher Deirdre Levy, public health expert Rachelle Peraz Ocampo, civil rights advocate Clifford Robin Temprosa and digital creators Dennis Almario, Chris Labaco, Jonathan Maravilla, Erwin Pajarillo and Eric Relucio. His original pieces were also featured in the movie Walwal, which was directed by award-winning filmmaker and Benilde Digital Filmmaking chairperson Jose Javier “Joey” Reyes. Fish Burger Steak
It’s not easy to get kids to eat fish — and like it, too. So, here’s an easy way to encourage kids to eat this healthy fare. Fish, especially tuna, is very nutritious and a good source of protein. It contains adequate amount of healthy omega-3 fatty acids that enhance the immune system and reduce inflammation. “It’s always ideal to eat fish at least once a week to encourage your family to eat more and stay healthy,” says the award-winning chef-instructor and food/restaurant consultant Sonny Mariano. Quick and simple to prepare, this updated fish dish is made extra special by adding a rich, creamy and buttery sauce that you can pour over steamed or fried rice just before serving. To take it one — healthy — step further, instead of frying the patties, you can also bake them to reduce fat in your family’s diet. You can prepare the patties the night before, keep it cool in the fridge and cook it the next day. “This dish really makes a good and healthy addition on your family dining table,” said Mariano. Fish Burger Steak For Tuna Patties: 500 g Tuna fillet, minced 2 tbsp Onion, minced 1 tbsp Garlic, minced 2 tbsp Spring Onion 2 pcs Large Eggs 1 cup Panko Breadcrumbs 1 tsp Salt 1/2 tsp Pepper For Sauce: 2 tbsp Butter 2 tbsp All Purpose Flour 2 tbsp Liquid Seasoning 1.5 c Fresh Milk 1/2 c Canned mushroom Pinch black pepper To make tuna patties, combine all ingredients in a bowl and mix well. Divide into 1/2 c balls and carefully flatten to make patties. Chill for at least 30 minutes. Pan-fry the patties until golden brown. For the sauce: Melt the butter and add the flour. Cook well. Add the liquid seasoning, fresh milk and canned mushroom. Mix well and bring to a simmer until thick. Season with black pepper. Serve with garlic rice and egg. The biggest food event of the year
Culinary events such as food bazaars, collab dinners among some of the best Filipino chefs in the metro and a pub crawl highlighted the inaugural Manila Food and Wine Festival held from 14 to 28 July. With activities spread out over a month, the MFWF was a culinary tourism celebration presented by the Department of Tourism and the MFWF Team led by Our Awesome Planet’s Anton Diaz, RestoPH’s Spanky Enriquez and Cebu Food and Wine Festival’s Kate Dychangco-Anzani. Its aim, said the organizers, was to introduce the Philippines and establish it as a culinary destination in Asia and the world, similar and at par with Singapore, Hong Kong and Bangkok, Thailand. [caption id="attachment_165804" align="aligncenter" width="1440"] Gen Tsi Heritage Dinner Chef Collab (From Left) Kalel Demetrio, Donatella Chua, Spanky Enriquez, Luis Chikiamco, Sharwin Tee, Nina Licad.[/caption] For the duration of the event, food lovers and wine enthusiasts had a number of opportunities to immerse themselves in a gastronomic journey that showcases the country’s vibrant food culture. Opening with grandeur and flair at The Westin Manila, the MFWF saw special guest merchants and innovators from the food and beverage industry, including Luisita Rum, Sebastian’s Ice Cream, Esguerra Kurobuta, Destileria Limtuaco, Karabella Dairy, Macaron Macaron and Mooncakes by the Hungry Chef, joining the grand launch. [gallery columns="2" size="full" ids="165799,165802"] The MFWF offered a plethora of exciting activities, including the festival bazaar at the Grand Atrium of Shangri-La Plaza, a Sunday lunch curation by chef Reggie Aspiras, a Makati Poblacion pub crawl and a food stamping program. One of the highlights of the event was a series of chef collaborations involving some of the best restaurants in Antipolo, Tagaytay, and Metro Manila. Antipolo Evolution, a 12-hands collaboration, took place at Tahanan Bistro. It featured a nine-course dinner prepared by chefs Danilo Botor Puga II of Burrow Cafe, Florence Hässig of Vieux Chalet, Kevin Tuason and Nikki Macaraig of Tahanan Bistro, culinary extraordinaire Editha Singian and Monique Tancongco of Moniquecakesph. Another 12-hands collaboration, Cavite Fresh! was held at My Country House in Tagaytay. It had six talented chefs working together to prepare a meal to remember — Jayjay SyCip of The Fatted Calf, Kalel Chan of Farmer’s Table, Rhea SyCip of Flour Pot Manila, Rhea Rizzo of Mrs. Saldo’s, Anthony Mendoza of Tuny’s and Arnold Gozon of My Country House. Destination dining featuring the freshest produce from Cavite, it turned out a sold-out crowd. [caption id="attachment_165803" align="aligncenter" width="894"] Admiral Hotel Presents The First Ever Collaboration Of Chefs Tatung Sarthou And Sau Del Rosario.[/caption] Gen Tsi, the six-hand collab for Metro Manila, happened at Flame, Discovery Primea and main characters were Chinese-Filipino chefs Luis Chikiamco, Sharwin Tee and Donatella Chua, with cocktails by famous mixologist Kalel Demetrio. Now, this one is different and unique because it puts forward Tsinoy heritage cuisine which, as Chef Sharwin says it, “is rich in culture and history, built on the backs of immigrants scraping by when they were deemed fifth class citizens. It nourished generations of Tsinoys who’ve made their mark on this nation and yet, it’s so undervalued that some Filipinos don’t even recognize it as Filipino. It’s so underrated, that even the ones who were raised on this food don’t dare lift it up. To put this food up on stage, The Manila Food and Wine Festival, a stage that I hope grows to international levels in the future, is an honor and a dream. Yes, people should pay for kiampung and sipo egg the way we do paella and risotto.” [gallery columns="2" size="full" ids="165798,165800"] And then there was the gala dinner finale at the Admiral Hotel, featuring the first ever collaboration between chefs Sau del Rosario and Tatung Sarthou. Manila Iconic took place at Admiral Hotel on 27 July. The eight-course Filipino menu honored the culinary icons of the county — Engracia “Aling Asiang” Reyes, Nora Daza and Larry J. Cruz —and was highlighted by the dessert creations of Admiral Hotel Manila M Gallery’s own executive pastry chef Christian Monera. Pretty in pink: ‘Barbie’ marketing blitz hits fever pitch
Hollywood A-listers have been walking red carpets in hot pink, glitter is back, and companies from The Gap to Burger King are doing rose-colored collaborations: "Barbie" mania is everywhere as the hotly anticipated film hits theaters worldwide. Toy maker Mattel, who first unveiled the iconic doll in 1959, has reached about 100 licensing agreements for everything from roller skates to toothbrushes in connection to director Greta Gerwig's summer flick. Of course, Barbie is big in the beauty world too -- lipsticks, blushes and mirrors all bear the famous logo. "In the 30 years that I have been tracking and analyzing box offices and trends, I've never quite seen anything like this before," said Paul Dergarabedian, a senior media analyst at Comscore. "Barbie is tailor-made for marketing," he said. "It's perfect because Barbie is a toy, it's already a product, and beyond that, it's a lifestyle and a color." The movie, which stars Margot Robbie as Barbie and Ryan Gosling as boyfriend Ken, has been hyped as one of the biggest blockbusters of the season, with numerous premieres held around the globe ahead of Friday's debut in US theaters. Of course, that promotion blitz has been curtailed at the 11th hour, with Hollywood actors now on strike over pay and other conditions. But the list of corporate partners is sure to keep the buzz going. Microsoft, Forever 21, Ulta Beauty, Hot Wheels, Chevrolet and even Progressive insurance are among the companies looking to cash in on Barbie mania. The influential color company Pantone even has a shade to match the zeitgeist: 219C is officially Barbie Pink. Mattel has even reached a deal with rival toy giant Hasbro, which will release a Barbie version of the classic board game Monopoly in the fall. In exchange, Mattel will showcase "Transformers" on its Uno card game in connection with a Hasbro film release. 'Irresistible' Robbie has embraced Barbiecore fashion at premieres around the world, recreating some of the doll's most iconic looks, but the Barbie lifestyle trend is also full steam ahead Airbnb is offering up a stay at Barbie's "Malibu DreamHouse" for two nights in connection with the film's debut. "Placed perfectly above the beach with panoramic views, this life-size toy pink mansion is a dream come true!" reads the listing. Singer John Legend and his model wife Chrissy Teigen took the plunge, posting a series of pictures on Instagram of their stay at the hot pink property. The most ubiquitous shade of pink used on the Warner Bros film's set, a retro bubblegum hue made by Rosco, was used in such great quantities that the shoot has been blamed for a global shortage. "It's just become a very irresistible proposition," said Dergarabedian, crediting both Warner Bros and Mattel with ensuring the buzz had staying power. Dergarabedian expects a strong opening weekend for Barbie, with around $75 million in North American ticket sales. 'Barbenheimer' The film is opening in parallel with another big Hollywood entry, the Christopher Nolan-directed "Oppenheimer," a biopic about the father of the atomic bomb. The unlikely face-off between the dark historical thriller and a fuchsia-tinted romp about a doll has created online buzz about a phenomenon dubbed "Barbenheimer." Dergarabedian said the coincidental timing of the openings had contributed to "unprecedented" fodder about the films on social media and beyond. Both movies are opening on the heels of another big-screen blockbuster, "Mission: Impossible -- Dead Reckoning Part One," which led the domestic box office last weekend. A starry soundtrack includes tracks from Dua Lipa (who also appears in the film), Lizzo, and Nicki Minaj and Ice Spice, who recorded a cover of "Barbie Girl," a 1997 hit by Danish-Norwegian band Aqua. The original recording actually prompted a lengthy but unsuccessful trademark lawsuit by Mattel. The company subsequently embraced the song. The movie's arrival has also not been without controversy. Barbie has been banned in Vietnam over a scene with a fictitious world map criticized for allegedly showing China's claims in the disputed South China Sea. The Philippines allowed the film to be shown -- but asked that the map be blurred. The post Pretty in pink: ‘Barbie’ marketing blitz hits fever pitch appeared first on Daily Tribune......»»
Feel like royalty at Tivoli’s Royal Lounge
When you’re starving, you want to wolf down on great food. You crave the familiar, the basic but lip-smacking delicious. You naturally pick your comfort food and wish to be satisfied, happy and full. [caption id="attachment_156739" align="aligncenter" width="525"] country burger.[/caption] [caption id="attachment_156741" align="aligncenter" width="525"] Pot roast beef braised in red wine.[/caption] [caption id="attachment_156742" align="aligncenter" width="525"] BBQ Pork Ribs.[/caption] That’s the idea behind the Royal Lounge, Tivoli Royale Country Club’s banner restaurant located on Yakal Street, Tivoli Royale Subdivision, Quezon City. It understands the concept of great food in a way that it does not need to impress. It just wants to make you happy. The al fresco poolside restaurant is unpretentious. Right next to a glistening turquoise pool, aesthetically pleasant dining tables and chairs are invitingly open to the hungry, or to big families with little kids, or to corporate yuppies for a hearty lunch meeting. The atmosphere at Royal Lounge is chill and friendly. The menu consists of familiar Filipino favorites but upgraded to an edgy hotel experience. Their chicken pork adobo, for example, has boiled egg and pickled papaya. They have pancit canton, beef nilaga, sinigang na sampaloc (pork or salmon, your choice) and even beef and ox tripe kare-kare. Their free-range chicken inasal with java rice is finger-licking good. At P580, it can serve up to three people. This popular Visayan dish of marinated chicken grilled over hot coals is mouthwatering, perfect for lunch after a dip in the pool. For shrimp enthusiasts, I highly recommend the Po’Boy — Louisiana-inspired crispy chunks of deep-fried freshwater shrimp sandwiched between Pistolet buns (all their yummy bread is baked in-house!), but made even more deliriously good with the Cajun spice blend, topped with pickle relish and remoulade sauce. Sous chef Jomhar Marcial’s Nasi Goreng is perhaps the ultimate breakfast meal. Inspired by Indonesia’s national dish, the rich and flavorful fried rice is cooked in a wok and served like a surprise underneath a perfectly concocted omelet and served with a side of chicken satay. Just opened a little over a year ago, the restaurant revamped its menu. Since then it has become quite popular not only among the country club members, but a favorite venue for social and corporate events for its pleasant and spacious area — and the scrumptious food. Thanks to executive chef Emmanuel “Jonnel” Roxas who specializes in Mediterranean cuisine and backed by experience in both hotel dining (the Sheraton Manila Bay, Pan Pacific Hotel Manila) and casual American dining (TGI Friday’s), the restaurant experience at Royal Lounge has elevated ever since his arrival. Chef Jonnel shared that he is collaborative, allowing his chefs in the kitchen to be creative and imaginative in putting their signature twist to already well-known dishes. But chef Jonnel says that he still makes sure that the food served to the members and guests is still familiar, because familiarity brings comfort. “Siyempre po, sa country club, normally, the families would want to have a place where they can relax and unwind, to bond,” he said. “Yung tema kasi dito is: ‘I want to eat something I can eat, and my family can eat’. The concept is familiarity.” “The guests are not going to spend a lot of time thinking what to eat, so they will get a burger, club sandwich, pizza — the familiar, humble and simple everyday favorites,” he further explained. But chef Jonnel’s creativity in these “simple” dishes is notable. His European taste, for example, is evident in his pot roast beef, braised in red wine sauce, as if you are tasting Julia Child’s recipe of Beef Bourguignon — designed for family dining. It is a savory delight, the beef melts in the mouth and you are suddenly transported to east-central France, in Burgundy. For young kids, the menu does not disappoint with a wide selection of meals that will keep them coming back: beef and bacon sliders, cheesy macaroni, mozzarella sticks and chicken tenders and fries, spaghetti and a lot more. The country club burger, meanwhile, is a sight to behold. Towering and crammed with cheese, caramelized onions, lettuce, bacon and a fat, juicy patty in the center of it all, which is so thick it’s like meatloaf. I had to break it down just so I can fit every single layer in my mouth. The BBQ pork ribs with a side of corn is another memorable experience — fall-off-the-bone tender. But what truly made an impact on me was the new experience: Chef Jonnel’s Tapa Don Galo, a recipe close to his heart as he grew up in the coastal town of Don Galo in Paranaque, where tapas are the specialty. One spoonful of the Tapa Don Galo is like eating the complete tapsilog experience with fried garlic sprinkled on top. It is heavenly. It comes with four kinds of dipping sauces: banana ketchup, white vinegar, chopped chili and rock salt. Mix, match, ignore, you can customize your dipping sauce. But, personally, the tapa alone is a winner. Believe me, you will dream about it for days. If you are on the hunt for afive-star hotel dining experience of your all-time favorites and more, the Royal Lounge is the ideal place. Sure, you can get a burger anywhere, or a gising-gising, or a country-fried chicken, but what the Royal Lounge does is that it adds a magic sprinkle of specialness to every dish, making it still comfortable but deliciously unique. ‘Crazy’ good: star chef Ana Ros puts Slovenia on food map
When Ana Ros started as a chef in Slovenia, all she had were some cookbooks and a bit of a "crazy" personality, as she herself puts it. Now the self-taught cook -- who was named the world's best woman chef in 2017 -- has her two Michelin stars tattooed on her fingers and is helping make her small Alpine homeland one of Europe's prime gastronomic destinations. Ros quickly found she had a talent for "matching crazy flavours", like coffee pasta with sea bass, lemon foam and basil, one of the early dishes that helped make her name. "Like a painter sees colours, the chef sees flavours, and I was always very well known for using very strong flavour combinations," the 50-year-old told AFP at her restaurant in the Soca Valley close to the border with Italy. Hisa Franko -- which Ros has been running for the last 20 years -- currently ranks 32nd in the World's 50 Best Restaurants list. But it is not the only restaurant of note in the country sandwiched between Italy, Austria and Croatia. The Michelin guide recommends 58 there, saying Slovenia "is asserting itself as a gastronomic destination whose potential and quality are constantly improving." Cooking from scratch And a large part of that is down to innovative chefs like Ros, who has also been featured in Netflix's "Chef's Table" series. Hisa Franko was a family inn serving traditional fare when Ros's partner at the time, Valter Kramer, took it over from his parents in 2002. Ros decided to join her husband in the restaurant, following her heart rather than pursuing her ambitions to pursue a diplomatic career in Brussels. "At the beginning, it was just like cooking for survival... I started cooking from scratch," said the chef. Right from the start, Ros developed a particular way of making "flavours hit your mind". "Because my food is all about my character. A bit crazy... still childish" to some extent, she said. Ros said her food is a combination of understanding the regional traditions and seasonality, but also her own personality. After years of hard work, news about the remote restaurant with a talented woman chef started spreading, and Ros is now regarded as one of the world's best in a field still dominated by men. "Sometimes you look like an exotic animal," she said. "But of course, the picture is changing with the new generation, who are super talented and super ambitious." Hisa Franko now has a team of 40 people from around 20 countries working in her kitchen and she plans to open a bistro in the Slovenian capital Ljubljana. The day she talked to AFP, her kitchen was turning out a starter of deer heart, oyster, kiwi and beetroot with mountain greens. Like a big family The country's cuisine "is one of a kind" and deserves a place on the culinary map, according to Lior Kochavy, a founder of a weekly street food festival in the capital that also brings together leading restaurants. "You will never be bored. There is all the time something new to try," he said. With Slovenia a melting pot of Latin, Slavic and Germanic influences, other chefs also say they attract diners by honouring traditions, seasonality and sourcing food locally. "We've always tried to make sure the distance between the field and the plate is as short as possible," said Tomaz Kavcic, who runs the one-star Michelin Gostilna pri Lojzetu (Lojze's Inn). "In the past that might not have been appreciated much, but now it is very valued," he told AFP. His menu "writes itself with just the products we see" from the restaurant's terrace on a vineyard-covered hill. Ros, too, said Slovenians have "always been using nature as their market". "Farmers and foragers -- you grow with them, you learn from them, you teach them. It's kind of like a big family," she said. IDAHOBIT observation highlights diversity and unity
On 17 May, the LGBTQ+ community, their allies and many agencies observed International Day Against Homophobia, Biphobia, Intersexphobia and Transphobia or IDAHOBIT, which is meant to raise awareness on the discrimination, marginalization and violence experienced by the LGBTQ+ community. This year’s commemoration carried the worldwide theme “Together Always: United in Diversity.” For the Philippine LGBT Chamber of Commerce, the theme “reminds us of the importance of solidarity towards battling discrimination.” “[W]e encourage business owners, leaders and influential individuals to raise our flag with pride, in their respective businesses and communities, in signaling allyship and respect for the LGBTQIA+ people. Let us promote an environment where people come together against stereotyping and discrimination, and where they are introduced to organizational values that effectively advocate a diverse workspace that includes everyone, regardless of sexual orientation, gender identity, gender expression and sex characteristics,” they said. For the Southeast Asian network ASEAN SOGIE Caucus, the day “aims to celebrate and appreciate the accomplishments of our LGBTQIA+ community, but the day is also the commemoration of our collective struggles.” IDAHOBIT “marks one of the most momentous turning points in the struggle for gender equality — the declassification of homosexuality as a disorder by the World Health Organization. A breakthrough in the recognition of the natural diversity in society and a step forward to materializing a just and equal world,” according to UP (University of the Philippines) Babaylan. “However, in this modern reality, it cannot be denied that our systems are plagued with the constant threats of impunity, indifference and violence. In the Philippines alone, many names have been victims to the rampant narratives of discrimination... the need to hold the line and ensure rights for all remains an arduous endeavor. From the margins to the center, every identity is met with oppression and challenged by circumstances,” the campus-based LGBTQ+ explained. “To this day, we remember each story and utter every name as a promise that the struggle lives on so that nobody might be next and that justice be served to those that came before us.” They further said: “As such, the movement finds itself emboldened with the pride and power of the collective. We recognize that there is no greater system than that of the people in pursuit of a shared goal: respect for human rights, reclamation of identities and acceptance of diversity.” UP Babaylan held a week-long celebration for IDAHOBIT called Here for Queers. From 17 to 19 May, the group organized the Intergalactic Expo Bazaar at the Rainbow Crosswalk, in front of the West Wing of Palma Hall, featuring queer-owned businesses. Aside from booths selling food and clothes, there is also a booth offering free HIV testing in partnership with HASH. [caption id="attachment_137956" align="aligncenter" width="525"] PHOTOGRAPH COURTESY OF UP BABAYLAN | UP Babaylan’s Intergalactic Expo Bazaar at the UP Diliman campus.[/caption] On 19 May, the Multidimensional FSL Workshop was held, where speakers Erika Allosa and Abraham Bagasin from Pinoy Deaf Rainbow taught the basics of Filipino Sign Language as well as sexual orientation, gender identity and expression and sex characteristics or SOGIESC. Here for Queers culminated with Benefit Concert: An Interstellar Night on 20 May at the Sky Bistro Ever with drag queens Mrs. Tan, Myx Chanel, Maria Christina, Inah Demons, Aries Night and Korona Dvil, and other performers Stef Aranas, Pixie Lanrador, Pointyyy, Lance Reblando taking center stage. Profits will be donated to Pinoy Deaf Rainbow. On IDAHOBIT, Pride PH intensified its call on schools to recognize and accept transgender at non-binary students. The group continues to help students with their schools that refuses to be inclusive. Aside from LGBTQ+ groups, foreign embassies also joined in celebrating IDAHOBIT. The German Embassy Manila has partnered with Zamboanga City-based Mujer LGBT Organization for the Human Rights Caravan to engage with local government units in Mindanao by providing gender and sexual orientation sensitivity training and teaching the importance of anti-discrimination policies especially when providing services to their LGBTQ+ constituents. The Caravan has been to Dipolog City, Isabela, Pagadian City, Tawi-Tawi and Zamboanga City. According to the embassy, “As co-chair of the Equal Rights Coalition, Germany is working to promote respect, acceptance and equality for all sexual orientations and gender identities. We encourage societies to reflect on the impact of homophobia, biphobia and transphobia and take action to combat these forms of discrimination.” The United States Embassy in the Philippines said that “the United States reaffirms our commitment to end discrimination and violence so that all of our LGBTQI+ friends, colleagues, neighbors and family may live freely with dignity and equal respect for their human rights.” “Countries are stronger when the human rights of lesbian, gay, bisexual, transgender, queer and intersex persons are protected and respected,” they emphasized. An Unforgettable Burger Experience
[caption id="attachment_135034" align="aligncenter" width="525"] PHOTOGRAPHS BY DARA ROA for the daily tribune | with my husband Daniel and the amazing Taiki Rattanapong Tsubota.[/caption] It was a quick trip to Bangkok in February with my husband. We promised ourselves to explore new neighborhoods and visit new places other than those we frequent. So, we committed to our adventure and went on a discovery spree into Silom (Saladaeng), Chinatown, Talad Noi, Ekkamai, Taling Chan, and visited a new mall called Icon Siam. All neighborhoods had their own unique charms that flaunted an abundance of sights and flavors. One of our most unforgettable meals during this trip was surprisingly not Thai food. It was a unique burger experience at a hidden kitchen studio in one of Bangkok’s hippest neighborhoods called Ekkamai. [caption id="attachment_135029" align="aligncenter" width="525"] Watermelon and Feta Cheese Salad — 90 percent frozen watermelon, feta cheese, tomato juice, balsamic glaze and mint.[/caption] [caption id="attachment_135030" align="aligncenter" width="525"] Crystal Beef Taco — crystal bread, tahini and sour cream, Mexican-style seasoned minced beef, pomegranate and lime.[/caption] [caption id="attachment_135028" align="aligncenter" width="525"] Mura”corn”mi — toasted garlic bread, smoked corn, cream corn sauce and corn soup.[/caption] Homeburg is definitely a place to visit. Homeburg is the brainchild of Taiki Rattanapong Tsubota who started his journey with a burger shop that went viral as he only took an extremely limited number of customers to cook and serve only four crafted burgers per day at a price that the customers are willing to pay. With a months-long waitlist and its popularity skyrocketing into the globalsphere, it was a shock to everyone that Homeburg version 1.0 closed its doors. But fast forward to today, he reopened Homeburg with an open kitchen concept and served only eight seats at a time at 2 p.m., 5 p.m. and 8 p.m. daily and will only accept reservations of two, four or eight. If you were three people, you would have to pay for four. [caption id="attachment_135033" align="aligncenter" width="525"] Homeburg Prototype#1 — Japanese milk bun, finely chopped pickled jalapeños paste, dashi cheese, pickles, crispy bacon, lemon syrup, rayu, and Homeburg sauce.[/caption] [caption id="attachment_135032" align="aligncenter" width="525"] Ultrasonic Fries — Chiang Mai potato and salt[/caption] [caption id="attachment_135031" align="aligncenter" width="525"] Steak Plate — Denver steak, beef jus, deep-fried sweet fish sauce, brussel sprout, potato custard and pumpkin puree.[/caption] Having some background knowledge of Homeburg, we booked our seats about two weeks before we left for Bangkok. But when we got to Bangkok, I got a message from Taiki saying their oven broke down so he would have to move or cancel our booking. I refused. I told him I had faith that the oven situation would be resolved and thankfully, it was! So, we were able to experience all the magic that Taiki has passionately worked on to come up with a menu that’s completely divine. His kitchen is literally his lab where he combines his creativity with science as he creates new dishes and tries to perfect existing ones. Wolfgang Steakhouse Grill opens city of dreams branch, expands menu
The name alone sounds expensive and intimidating, but the owners of Wolfgang Steakhouse Grill swear it’s because they serve only the finest food. Known for its signature USDA prime dry-aged steak, the chain has opened a fourth restaurant in the Philippines with more grilled items on offer — the better to encourage people who love first-rate food and a relaxed atmosphere The new Wolfgang Steakhouse Grill at the City of Dreams Manila in Parañaque City had a grand launch Tuesday night attended by the founder himself, Wolfgang Zwiener, accompanied by wife Elena and son Peter, now the president of the world-renowned Wolfgang’s Steakhouse. The event was also graced by its local managing partners led by Raymund Magdaluyo (Red Crab Group of Restaurants) and Leina Bolinas (Excello Restaurant Management Group). The resto’s other outlets are in Resorts World Manila in Pasay City, Bonifacio Global City in Taguig City and The Podium in Mandaluyong City. This is also the 32nd location of Wolfgang Steakhouse worldwide. What makes this new location extra special is that this is the only Wolfgang Steakhouse with grilled offerings. New grilled dishes have been added to the menu for diners to order from brunch to late night, such as Grilled Barbecue Short Ribs, Dry-Aged Brisket Pastrami, Beef Tartar and Grilled Lemon Caper Chicken. “Wolfgang Steakhouse is a classic steakhouse that serves the finest beef,” said Peter in his brief speech. “Here at the Grill, we are able to introduce more dishes using the different parts of the cow and the various ways of preparing it. This gives us an opportunity to offer those who want to eat other interesting and flavorful dishes, such as Lomo Saltado (a Peruvian dish) and chicken dishes. But, the good thing is, we still offer the regular full menu of Wolfgang Steakhouse.” Peter reflected on how the restaurant has come a long way from its first outlet in Manila in 2016. “Thanks to our fabulous partners like Raymund Magdaluyo and Leina Bolinas and their team,” Peter said. “We were very fortunate. I still remember the day I met Raymund in Japan after he called me to say he had a fabulous dinner at Wolfgang on Christmas Eve. He told me a beautiful story about his family and how they had a great dinner there. He told me he wanted to have Wolfgang Steakhouse in the Philippines. And it came to fruition many years later.” “After the pandemic, we are coming out stronger and we want to grow more rapidly in the Philippines and offer our steaks to everyone,” he added. Elegant, contemporary Boasting an intimate and cozy atmosphere with dark wooden interiors and an old-world charm, the 350-square-meter steakhouse features an intimate whisky lounge and impressive wine cellar. Popular among its steaks are the short loin, porterhouse and rib-eye. “Grill means basically direct fire. We offer more grilled items,” said Magdaluyo, adding that, “for us, the actual concept of the grill is that this place is a bit casual. Upscale but casual. Meaning, you can come as you are. You can wear shorts or beach wear and that’s perfectly fine.” Magdaluyo also shared that another Wolfgang Steakhouse Grill, with a sports grill theme, is opening at the Araneta Coliseum by October. “It’s a 40-seater place to serve the Quezon City market,” he said.
